We had a crazy busy weekend between work and plans with friends!  This week is shaping up to be a very busy one for me at work too, so in an effort to save some time I’m going to just post a highlight reel from the weekend.  :D

Saturday night’s dinner was one of my favorite recipes, Salmon and Shrimp Cakes from Chef Bubba.  I typically leave out the jalapeno and chives, just because I don’t often have them on hand.  This is a great way to use up leftover salmon.

Monday Statistics

Fasting Blood Sugar = 125 (Argh!!)   :(

Nick asked for eggs for breakfast, so we had scrambled eggs + beaters with pancakes from the freezer.  Keepin’ it simple!

We stopped at Great Clips on the way to daycare and got Nick a hair cut.  He looks like a little man again now.  <3

After a couple of hours of work I had some leftover artichoke chicken for lunch.  I figured it’s nearing the end of it’s useful life so I’d better eat it up!

At about 3 o’clock I snacked on some peanuts and a latte that I made using my french press. (torani vanilla syrup, half & half, water, coffee)

I am going to grow wings and start clucking soon…..more chicken for dinner!  These are chicken tenders sauteed in a pan with olive oil and some random chicken seasoning I have in a ziploc bag that Ross’ mom gave to me a while back.  I microwaved a bag of Steamfresh green beans with bell peppers in a “light sauce.” The sauce didn’t have much flavor to it, but Rio loved these.  She gobbled up hers, most of mine, and some of Nick’s! I sliced up a red apple and a green pear as well. Note the Chick-Fil-A sauce in the background.  I kept it from the last time we went there, and used it to dip my tenders in.    :)

After the kids went to bed I did some online training for work, and snacked on some deli ham slices and a few crackers.
