Nick got into my bed on Wednesday morning when he woke up and asked if he could play games on my phone.  Shortly afterward, Rio got up and was super interested in what her brother was doing.  Aren’t they so cute snuggling together?

This salad had a bed of lettuce with the leftover coconut shrimp, avocado & watermelon kabobs, the leftover edamame salad, and some diced up pineapple. I figured that between the various marinades on the kabobs and edamame salad, I didn’t need any additional dressing.

1.5 Hour After Meal Blood Sugar = 143 (goal < 130) High!  Now, I had the kabobs for dinner on Tuesday night, and got a great 1 hour number of 109.  This is one of the most frustrating things about blood sugar maintenance.  Sometimes there are just no answers. Was the 109 reading a fluke? (I don’t think the 143 was because I took it twice and got 143 then 144.) Did the extra pieces of pineapple push me over the edge?  Most likely I think it was because I had several more shrimp at dinner.   I only had about 4 on the salad, so it probably wasn’t enough protein to balance out the fruit and edamame.   :(

I had plans to hit up Community Bingo with a few gal pals on Wednesday night, so I put this Baked Artichoke Chicken in the oven nice and early and had it ready not long after the kids got home.  One perk of working from home is that you can get dinner ready while making lunch!  :)

And…..fresh out of the oven!  These are bone-in thighs with skin. The outcome was pretty good, but next time I would either salt them a little more heavily, or try to get a little salt under the skin, because the skin and juice were yummy but the seasoning didn’t really get into the meat.  I try not to eat much of the skin, so there goes a lot of the flavor!

We had fun at bingo!  I didn’t win anything, but a couple of the regulars were nice to us and helped us out.  It only cost me $18 to buy cards for the whole evening program (about 3 hours) plus an ink dauber, so it wasn’t a bad deal.  Two of the games had $1,000 prizes!  I would definitely go again.


I was thinking about having a protein smoothie for breakfast, but Nick wanted eggs, so I decided to make eggs all around.  Luckily we had some leftover blueberry french toast in the freezer.  I think this toast is more delicious when re-heated.  I like my french toast to be firmer in the middle (not mushy), so I think it benefits from the extra toaster cooking.

Lunch was a little hectic.  I was about to walk out the door to grab a few things at Walmart when I realized that I should probably eat lunch first.  I looked for something quick in the fridge and noticed that there was a leftover pork chop that needed to be eaten.  We have an overflow of apples and pears right now, so I grabbed an apple to go with it.  Then, I remembered that I also had a few kale leaves that I wanted to finish off, so I decided to make the smoothie that I didn’t get for breakfast.  It had 1 apple, 1 orange, approx. 1 frozen banana, a few frozen cherries, a handful of kale leaves (stems removed), some vanilla stevia, and unsweetened almond milk.  The picture below is before I added the almond milk.  Since I was having a pork chop too I didn’t add any protein powder to the mix.

Right as I finished making the smoothie I looked up and realized that a dang bee was dive bombing my head.  I am irrationally afraid of bees, so I started running around and yelping, which freaked Squirty out.  She also saw the bee and was snapping at it, but she didn’t catch him (luckily.)  Finally he settled on the window.  Can you see him?  He is on the right side….it’s hard to see.

Since the bee was in the kitchen I decided to eat my pork chop outside, and in the madness I forgot to take a picture of it.  I put a lid on the smoothie and took it to Walmart with me.

Thursday is our designated Finger Food/Happy Hour Night!  WooHoo!

This week we had a lot of store bought and easy items because I was busy with work and pressed for time!

And, banana-brownie kabobs with chocolate drizzle.  I picked the brownie bites up at Walmart, and I didn’t think they were very good, so luckily that kept me from eating too many of these.

It’s Friday night now as I’m finishing this post.  I meant to put it up this morning, but had too much work to get done!  I only have one picture from today which was of my lunch, so I’m going to skip a separate post for today. I had Bob Red Mill’s High Fiber cereal for breakfast, and for lunch I had a half of a pastrami and ham sandwich on whole wheat (13g) with leftover veggies and ranch from Thursday night’s tray.  My 1 hour blood sugar number was 164!!!!!  I tested it twice, so it didn’t seem to be an error.  I must have some funky hormones going on today, because that was a pretty low carb lunch.  I did have a few goldfish, maybe 8-10 while I was fixing my lunch, but i can’t imagine those would account for that number.   WTF?

Ross wanted to go out for sushi tonight and I was still pretty bitter about my lunch number. so I had a little bit of a “what’s the point in trying” attitude at dinner and I didn’t sweat the white rice.  I did actually test my sugar though, and  my one hour number was 162.  That number didn’t really surprise me, since sushi rolls tend to spike me normally.  I don’t know what was up with my lunch number.  Hopefully whatever was going on is over by tomorrow.

We have a really busy weekend planned, so I’m going to try to get to bed soon. Have a great one everybody!
