One thing I actually dig about the hot desert summers is having iced coffee in the mornings.  Normally I cold brew the coffee if I’m planning to have it iced, but I’ve been making it this week with my Aerobie Aeropress, and it’s just so easy I’m not sure I’ll go back to the cold brew.  I guess it will depend on the coffee that I’m using.  Sometimes I like to make iced coffee with a light roasted fun flavored coffee, and I don’t think that would work well with the Aeropress.

On Saturday morning I threw some leftover taco filling (ground beef, black beans, spices, etc.) into a frittata because we slept a little late and didn’t have time to get our standard Senor Taco burritos.

Scrambled Eggs and Toast

This one is a little better…..spinach, mushrooms, and laughing cow light cheese scrambled into eggs with mini banana muffins.  I have some confessions to make about these muffins.  I made two batches of banana crumb mini muffins using this delicious recipe for a play date we hosted on Friday morning.  Well, I made WAY too many, and had a ton left over.  Instead of doing the smart thing and freezing them I instead popped one into my mouth 3 or 4 times a day all week!  I am happy to report that they are now gone.  And, the two in this picture ended up being eaten by the kids.  :)

I haven’t been taking breakfast readings lately because I’ve been eating a lot of standard fare where I know the results would be decent. I’m only prescribed 2 strips per day, so I have to conserve where I can.

I ate sooooo many leftovers for lunch this week.  Ross was out of town AGAIN, and I was left to clean the fridge out by myself.  I ate the red beans and rice from last week at least 4 more times, and didn’t even finish them.

Here I had the beans with some leftover tilapia and salad.

Today I had leftovers of Monday night’s dinner of turkey and veggies over brown rice.  It’s not a very photogenic dish.  :/

As I was going back through my pictures for the week I realized that the method to my madness for the week was to throw various meats on top of a tortilla with some tomatoes from the garden.   Here it was leftover chicken breast.

Ground beef and black bean filling is hidden inside these taco shells.  This was the first time I ever used store bought shells, and they were really good!  I loosely based these off of the Pioneer Woman’s salad tacos.

On Sunday night I bought some store-marinated carne asada and threw it on the grill.  Yes, I grilled it myself! Ross had to attend a dinner at a conference, so I braved the outdoor heat and the unfamiliar grill.  It turned out pretty good!  The kids and I had some oddly timed mini-meals on Sunday, so we never really sat down to a “dinner.”  I picked on this meat when it came off the grill and had a few forkfuls of the kids’ mac and cheese.

The tomato plants continue to produce!  I boxed up a lot of these cherry tomatoes and gave them to a neighbor.  I can’t keep up!

The large ones went into the vitamix with some basil, salt, and a little garlic to form a tomato sauce of sorts.

Next time I would try squeezing the juice out of the tomatoes first, to help make it thicker.  I guess this is also why most homemade tomato sauce recipes involve a long simmering process….to thicken it up.  I didn’t have time for all that, so this went right into the pan with some ground turkey and frozen broccoli and cauliflower.

The big news for the week is that I signed Ross and I up for the Advocare 24 day challenge.  I have a friend who is wrapping up her first 24 day challenge and is loving the products/program (and she looks great), so I thought we might as well give it a whirl.  Basically, we will be trying to eat cleanly while also taking various supplements and energy drinks.  No more iced coffees for a while…..the spark drinks have enough caffeine in them for my purposes.

I received a booklet with recommended recipes through my 24 day challenge group on Facebook, so  a lot of our dinners will be coming from there over the next few weeks.  The turkey and rice concoction above was based on one of them.

Our “bundles” arrived today!  This is all of the products that Ross and I will be taking over the next 24 days.  Wow, right?!?!  There are some meal replacement shakes here that we will have for breakfast, but not until after the first 10 days.

I’m going to try to update here every few days so I can report back our thoughts and results about the Advocare challenge.

Nick got his T-Ball pictures back this week.   I took a picture of a picture in poor lighting, so please excuse the bad quality.  Also, Ross says I did something wrong to it when I resized it and his head looks too wide.  I don’t know what happened, but whatever!  My boy is so big!  I guess I need to get one of those wall frame things where I can put the jersey in and hang it up.  He only has 1 game left!  :(   I think our next adventure will be ice skating and then maybe hockey!

I’m catching up on yesterday’s (Monday’s) episode of The Voice as I type.  Speaking of The Voice, I’ve been reading the reports that Christina Aguilera will be coming back next season.  I wouldn’t say I disliked her as a coach, but I just like Shakira so much better.  I’m a little bummed.  Shakira is so sweet……and, she wears pants, so she has that going for her.  I still can’t decide which contestants I am pulling for this season.  There are so many good ones!!
