Hakuna Matata!

Well, so much for posting more than once this week!  :/  Actually, I’ve had some problems getting on my administrative dashboard for the site, but that seems to have resolved itself.

Has everyone filed or extended their taxes?  I hope so!  It wasn’t so many years ago that I would have spent the afternoon and evening of April 15th partying down with my wonderful friends and colleagues.  Now that I am in a different state from the rest of my firm I will have to live vicariously through them when I talk to them and hear all about the party!

Anyway…on to the food!

A few boring breakfasts:

Hard boiled eggs and American Blend Earnest Eats (made with unsweetened vanilla almond milk and stevia.)

And, the most exciting breakfast of the week…..a shrimp creole omelet.  Ross, Rio and I shared this bad boy.  I made a shrimp dish for dinner one night from my South Beach Diet Book, “Big Easy Shrimp.”  (I see the same recipe posted on the web here.) The leftovers went into this omelet.  I’ll say this was better than the shrimp creole omelet I had at Mother’s in New Orleans!

Lunches were not super exciting this week.  I had a few of my mason jar salads, and we ate out a couple of times.  Speaking of the mason jar salads, I had mixed results.  The Asian one I had was yummy, but I definitely overdressed it.  The garden salads with the protein ranch didn’t shake up well because the yogurt/ranch got too thick in the fridge.  Next time I might just leave the dressing out since I eat them at home and can easily just add dressing on top.

I wanted to use up my last three hard boiled eggs one day so I made some tuna and egg salad with mayo, mustard, and dill relish.

On Sunday we were picking around on random leftovers and frozen pizza!  I made a big quesadilla using leftover cilantro lime chicken and some sautéed bell peppers and onions.  This was tasty!

We had some pretty good dinners this week.  I made cilantro lime pesto chicken tacos using this recipe.  The chicken was good….not amazing, but I will definitely try it again.  Firstly, I don’t know if the cilantro from my garden had the right taste.  I found out a few days later that my plant has gone to seed and that I should have harvested the plant before that point.  Also, I blended mine in the Vitamix, and so it was a solid avocado green color and not at all chunky like it is on the page where I found the recipe.  I will make some changes the next time around.  We topped the tacos with sautéed bell peppers, cheese, and avocado slices.  Yum!

Here is the Big Easy Shrimp that I talked about above.  I just received a new cookbook in the mail called The New Orleans Cookbook and the shrimp creole was praised in many of the reviews, so I’m eager to try that recipe to compare and contrast against this one.  We had it over royal blend rice.

On Friday night we had another South Beach Diet recipe….portabella mushrooms topped with goat cheese and pine nuts in a marinara sauce.  I added a bunch of spinach to the sauce because I needed to use some up.

On Saturday Ross did some St. Louis ribs in the smoker.  They were good, but not as good as the baby back ones he usually makes.  They were a little too fatty.

I gave another flavored water combo a try.  My mom gave me this water bottle infuser thingy so I decided to do it in there and make a smaller quantity than I did for the watermelon rosemary water last week. This time I used pineapple and mint.  I didn’t like it again!  I guess since I really like the taste of plain water I should just give up on this flavoring thing!

That about wraps up this week’s highlights.  Oh, and I did one measly little workout video during the week.  That’s not enough obviously.

The most fun part of the week was taking Nick to see Disney on Ice on Thursday night.  We had dinner at the Hard Rock Café on the way in.  The show was made up of snippets of several different Disney movies and was very entertaining. Nick liked it a lot.  My favorite part was the Lion King segment!  Hakuna Matata!
