I’m going to just put it out there.  The past few days haven’t been great on the diet and exercise front.  I had a few busy days and we ended up eating out more than we should have.  And…….I didn’t check my sugar often enough……..and….I didn’t do my BodyRock Challenge for 3 days straight.  :/   I have to get back on track!  ( I did get in my BodyRock Challenge workout today (Thursday) though!)


Fasting Blood Sugar = 94  Woo Hoo!  This was my first fasting reading under 100 in a long time!!  I took this reading at about 6:30am.   I wonder if the good number was due to the earlier than usual reading, or if it was just a fluke??

I bought Ross some instant Cream of Wheat packages the other day when he asked for hot cereal.  He turned his nose up at them because I guess he doesn’t like the instant kind.  Each package is under 30 carbs which is my breakfast limit, so I’ll eat them myself!  I tried the maple and brown sugar flavor.  It was yummy, but way too sweet.  I think next time I’ll mix a regular pack with a flavored pack and then eat half of it at a time to cut down the sweetness.

At lunch time we took some old baby gear down to the consignment store and Ross wanted to stop in at Freddy’s Frozen Custard and Steakburgers for lunch.  I agreed, thinking I would get a salad.  Can you believe there was not one measley salad on their menu?  I ended up with a double steakburger and fries….basically the total opposite of a salad.  I ate very little of the bun and about half of the fries.   The best part of the trip was that Freddy’s had free kid’s admission tickets to the circus next week.  I’m thinking Nick would like to go.

I made this Braised Coconut Spinach with Chickpeas and Lemon from Hell If I Gnaw for dinner on Monday.   I only used the juice from half of my lemon because it was a really juicy one.  I thought this dish was really good.  We had it over brown rice.  Luckily I had some minute brown rice on hand because I was rushing to get this dinner made.  I got confused about the time while I was working in the afternoon and thought it was only 4:20 but then realized I was looking at California time (my work phone and computer show CA time when I am logged into my firm’s remote server) and it was actually 5:20!!  I had to jump up and bolt out the door to get the kids!

I made some Bob’s Red Mill high fiber hot cereal for breakfast and added in about .5 cups of canned pumpkin (for 2 servings.)  I sweetened it with Vanilla Creme liquid Stevia and topped it with unsweetened shredded coconut, walnuts, and a tiny blob of Biscoff spread.

We were headed to Costco after picking up the kids and had dinner nearby at Baja Fresh. I had their chicken mango chipotle salad.  Nick ate all my avocados though!  :)

I was going through egg withdrawal by Wednesday!  I paired scrambled eggs with pancakes from the freezer and topped my cake with a thin layer of Biscoff.

Ross was out running an errand and called to ask if I wanted Jack in the Box for lunch.  I held strong and had a healthy lunch instead.  This was one of my few successes this week.  My picture was blurry so I didn’t post it, but it was just leftover coconut braised spinach & chickpeas with leftover cabbage from last weekend.

Wednesday night was where things really went off the rails.  Ross and I had planned to go out for dinner to review our financial reports from 2012 and discuss some goals for 2013.  I didn’t know where we were going, but he decided on Stockyards, which is a really yummy steakhouse.  Where do I start?  We had corn muffins and biscuits with a yummy sweetened butter and a relish tray to start.  Then I had a green goddess salad, and filet mignon medallions in a peppercorn cream sauce with veggies and whipped potatoes.  Finally there was an incident involving an apple toffee cake!    This dinner was a blood sugar fail!  I assume so anyway, since I didn’t bring my test kit with me and we didn’t get home within a two hour window.  It would have been interesting to see what that number would have been.

Oh yeah….I had a glass of white wine too.  That’s all.  I think.

My stomach was actually hurting in the middle of the night which I took to be a sign.  I decided to have a super healthy breakfast on Thursday morning.


I bought a sample sized pack of Amazing Grass Superfood – Orange Dreamsicle flavor a while back which I finally decided to try.  I made a giant protein shake for Ross and I with 4 oranges, approximately 2 frozen bananas, about a cup of unsweetened vanilla almond milk, vanilla protein powder, and the amazing grass.  It was pretty tasty.  I think I’ll buy a larger package next time.  I have a good bit of the chocolate flavor in the pantry, but the orange was a nice change.

At about 10:30 I had a mocha latte with coffee, frothed milk, splenda, and special dark cocoa.  A babybel cheese rounded out the snack!

Poor Ross was feeling terrible again today and made another visit to urgent care.  When he got back he was craving brunch at Denny’s, so we headed over there.  I had one of their fit fare options which was a chicken and avocado sandwich on whole wheat with raw veggies on the side.  I had a little bit of ranch with the veggies, and only ate about half of the bun.  It wasn’t the most delicious lunch, but at least it didn’t weigh me down.  :)

I intended to go to the grocery store, but the lunch trip to Denny’s set me behind and I had a lot of work to do in the afternoon, so my dinner plan didn’t happen.  Instead, the kids and I drove through Senor Taco on the way home.  I ordered the carnitas plate which Rio and I shared.  I ate about half of the meat, a little of the beans and rice and the better part of a big tortilla.

Another busy week almost bites the dust!  Tomorrow we are heading to Blythe to visit my mom, so we will be hitting the road right after we pick the kids up.  It will only be a short 1 day trip though because we have to be back in time to watch the Super Bowl!

I know I said I was going to get some 2013 goals written down by the end of January.  I only have a short list so far:

1.  Maintain healthy blood sugar levels and try to get my weight down to about 170.

2.  Establish a better routine for wake up times and bed times.

3.  Manage my time during the work day more efficiently.

4.  Exercise more!  This needs to be part of my routine.

I’ve been getting up at about 6:30 every morning this week, so that’s a start.  I’m trying to wake Nick up at about 7:30 every morning to hopefully try and get his bed time under control.  It takes the poor boy at least 2 hours to fall asleep at night and most nights he doesn’t fall asleep until about 11.  I always read about how kids do better with earlier bedtimes, so I’m trying to start shifting our schedule that direction.  Tonight when I was putting him to bed he let me know that milk comes from cows, and that chickens sell eggs.  LOL!

Well, it’s almost midnight so I need to get to bed.  We are just finishing up an episode of Dexter as I type this.  I love this show so far!  I’m glad we have many seasons to catch up on.  It’s filling the void left by Game of Thrones!
