Yay for Friday!

I dropped this pear on Thursday night and it got a cut in it, so I made sure to eat it for breakfast on Friday morning before it got all yucky.  Two eggs made it a meal!

The bike ride to daycare plan didn’t pan out on Friday morning, because Nick woke up with what looked like pink eye!  We dropped Rio off at daycare and headed over to the urgent care.  The doctor agreed that it looked like pink eye and decided we should treat it as such.  So obviously Nick couldn’t go to daycare, and my work day got mostly derailed.

While I tried to get some work done, Nick did a lot of this….

For lunch I combined the leftover pulled pork with the leftover veggie tray from Thursday night to make this salad.  The greek yogurt/ranch dip from the veggie tray made a nice thick dressing.

I was going to make lentil tacos for dinner, but I had a mango and a few kiwis that needed to be used, so I decided to make tilapia with a fruit salsa on top.  The salsa was made of mangoes, kiwis, oranges, pineapple, salt, and s light squeeze of honey.  I made it a couple of hours before dinner so it could stew.  Oven roasted red potatoes (with salt, pepper, paprika, and olive oil in the over at 400 until done) and frozen broccoli were on the side.

Ross made blueberry french toast for breakfast!  Score!  Instead of an egg on the side I sauteed some polish sausage and topped it off with a scoop of cottage cheese.

After breakfast Rio helped me do some gardening outside.

It took me a while to hack down and pull out the big giant basil plant, but I did it.  The garden beds are now empty and ready for new plantings.

We’ve had some nice warm weather lately, and my fruit trees are starting to bloom already!  Doesn’t it seem too early?  I hope it’s not a problem.   Here is the peach tree.

Saturday was one of those “snack on-and-off days” with no noteworthy lunch.

While Rio took her nap Nick and I went for a bike ride and stopped at the little park by our house to play.  I stood under a tree while he played because it was so hot!  According to the thermometer on our back porch it was 85 out there, but it reads hot because it’s touching the wall.  It probably was about 80 though….in February!

For dinner I made the lentil tacos that I didn’t make on Friday.  I used this recipe for the taco filling.  I thought it was delicious!  I also mixed a can of rotel with some brown rice, onion, and garlic as a side dish.  Since I was going to have lentils and rice I decided to have it over a salad instead of in taco shells.

Ross was out fetching breakfast burritos a little earlier than usual and Senor Taco wasn’t open, so he picked some up at Ramiro’s instead.   The machaca is definitely not as good as Senor Taco’s, but it’s decent.  Rio and I shared one of course.

I didn’t test my blood sugar after breakfast because we threw the kids into the car and headed over to the World Wildlife Zoo!  :D

I don’t remember the name of this animal, but it had a crazy long snout that moved around like a finger!

Nick loves to feed the birds.  He kept asking me if any of the birds were a crested auklet.  He has a National Geographic magazine with one in it, and every time I say the name while we read it he cracks up laughing…..I’m not sure why.  Crazy kid.

The best part was feeding the giraffes, but I didn’t get any pictures.

Neither of the kids seemed to jazzed by the train ride.  I don’t know why we bother.  Maybe next time we’ll try the boat ride.  I think the boat is cheaper too!

The rest of the day was a bust in terms of pictures and blood sugar testing.  We had lunch at Dillon’s (in the zoo) and I had a beef dip sandwich with green beans on the side, but I totally spaced and forgot to take a picture.  I took half the bread off the sandwich.

After we came home and Rio took a loooong nap, Ross’ parents took us out to dinner at Deano’s Greek and Italian Grill.  I had a lovely greek salad with a piece of grilled chicken on top.  It was very good.  They have the best greek dressing there!  I also had a glass of Moscato and a couple of bites of Ross’ chocolate mousse.   :/

Another weekend bites the dust!  We had a great time at the zoo and the kids were worn out.  Nick only took about 40 minutes (instead of 2-3 hours) to fall asleep tonight (Sunday night), so I call that a success!
