Why does it seem like it’s always Monday around here?  We somehow managed to get through our first week of daily swim lessons last week, but it sure was hectic.

Breakfast, lunch and dinner highlights:

This was supposed to be an egg sandwich on an english muffin, but Rio swiped the top of my muffin!  That’s her egg in the background.

To take a break from eggs I had Bob’s Red Mill High Fiber Cereal made with vanilla unsweetened almond milk, a tiny bit of honey, dried blueberries, and walnuts.

Eggs + beaters scrambled with tomatoes and cheddar cheese.  I have an english muffin theme going on this week.  These are Thomas Light 100% whole wheat muffins (27g each.)

Freaky egg face!  We have a stove top egg poacher that works really well.  I would use it more, but I hate cleaning all the pieces. Ross and I used to eat these poached eggs on english muffins almost every weekend when we lived in our condo in Santa Barbara, while watching Holmes on Homes on HGTV.  Memories……

I haven’t been taking pictures of my lunch when it’s some redundant leftovers because I don’t want to post two almost identical pictures.  I must have been eating a lot of leftovers this week, because I only have a few lunch photos!  I did have a Chipotle Orange Shrimp Salad at Rubio’s one day that I forgot to photograph.

I used to buy frozen cook-in-bag turkey breasts from target which were on the bone, but I haven’t seen them at the store in a while. I ran across this boneless one the other day and I was a little hesitant to buy it because I wasn’t sure if it was just a breast cut off the bone, or one of those processed turkey-loaf type things.  It turned out to be a regular breast!

I wolfed down this turkey sandwich while running out the door to take Nick for a visit at a new potential pre-K school.  He’ll be moving to the new, bigger school sometime this summer.  It freaks me out to think he won’t be with Miss Ashley anymore, but he is ready to move on.  Sniff sniff…….

I brined these pork chops using Alton Brown’s Good Eats Turkey Brine.  It is so worth taking the extra brining step when cooking pork.  The brine makes it so juicy and flavorful!

I bought some pre-packaged carne asada (Guy Fieri’s brand) and had Ross grill it up quickly when we got home from swimming lessons.  I also had a big pot of pinto beans that I had made in the crock pot. I put the meat and the beans on a salad with lettuce, cheese, tomatoes, sour cream and tapatio, and a tortilla on the side.

This looks like a pork chop, but it’s actually a seared ahi tuna steak.  I have to buy frozen ahi here because I never see it fresh in the grocery stores.  I tried to make a wasabi-soy marinade for it, but accidentally put worcestershire sauce in instead!   :0  I did add a little soy sauce in too.  The flavor was a little weird, but not totally bad so I went with it. Once it was cooked I couldn’t really tell. Garlic and ginger sautéed spinach and brown rice were on the side.

Leftover night.  The kids and grandparents originally had this chicken pizza (from Papa Murphy’s) when Ross and I were at the Big Red Rib Festival.  I also had some pinto beans with cheese, tomatoes, cilantro, and turkey breast.  That red puddle with the pizza is tapatio!  It’s soooo good with pizza!

I wasn’t feeling that great and ended up only picking at the beans.  Of course I ate the pizza!

This weekend was the Big Red Rib and Music festival down at the University of Phoenix Stadium.  There were 8 different BBQ vendors in a cook-off.  As Cardinals season ticket holders we received complementary passes which were good for all 4 days (Thurs-Sun.)  Ross and I went on Friday night alone, and then for a little while on Saturday evening with the kids.  Both nights we bought a big BBQ platter to share.  I forgot to take pictures of the food!

I did get this one picture of Ross while we were waiting to watch Phil Vassar (who I love) on Friday night.  I think he is contemplating whether he preferred the ribs or the pulled pork.  :)

I forgot to post this picture last week.  This is Rio at her first day of ISR swimming class.  Isn’t she cute in her little swimsuit?  She’s doing very well, but she totally hates the lessons and cries for the whole 10 minutes.

I was able to make it to my book club meeting tonight.  The book was Unwind by Neal Shusterman and it was a young adult novel about a future where parents can elect to have their teenagers “unwound” which basically means they are dismantled piece by piece and their parts are donated to others.  Creeeepy, right?  It was mildly disturbing, but an interesting concept.

I’m wrapping up watching an episode of Smash right now.  I love this show!  I heard that it’s probably going to get cancelled though…..that’s my luck!
