It goes without saying that we had another busy and fun week here. Ross was in North Carolina for the week, daily swimming lessons continued, and Nick turned 4 years old!

Breakfast Highlights:

I must have accidentally deleted some pictures because I know I took more than two breakfast and two lunch shots, but this is all I seem to have.  Hmm…..

Anyway, I made this shake which was inspired by this Protein Frosty recipe.  I used chocolate protein powder instead of vanilla, and not as much cocoa powder since I was using Hershey’s Special Dark.  I wouldn’t say my version tasted like a frosty, but it wasn’t bad and had great texture.  The next time I try to make a frappuccino-type drink I’ll use the xanthan and/or guar gums and see if it helps the drink not separate as much.

Dinner Highlights:

Monday night was hectic because I had about 30 minutes to get the kids situated and eat dinner before heading to book club. I made a roasted chicken recipe from my new cookbook Crescent City Cooking: Unforgettable Recipes from Susan Spicer’s New Orleans. I made it before I left for swimming lessons and cut into it when we got home. Those are kalamata olives and onions on top of the chicken.

Leftover roasted chicken made it’s way into a quesadilla with some cheddar cheese for a quick dinner.  We also polished off the green beans.  :)

I finally got around to making this Quinoa Pizza Crust!  I made it into a BBQ chicken pizza with BBQ sauce, chicken, mozzarella, cashews, and cilantro. The pizza was made in the oven, but in skillet.  I wish I had a larger skillet, because the crust was a little thicker than I would have liked, but the taste was good.

I paired my slices with a small a antipasto salad with pepperoni, black olives, and cherry tomatoes, drizzled with Ken’s Light Italian dressing and some ranch.

I forgot to take a reading after this…..dang it!  I really wanted to know how this crust worked out for me.

My Mom and her husband Tom came into town on Friday night, and I wanted to have dinner mostly ready for everyone when we got home from swimming lessons.  I made this Sweet Balsamic Glazed Pork Loin in the crockpot, and then sauteed some potatoes and microwaved some frozen veggies when we got home.  This pork is very yummy.

While at Target this week I noticed that they have a new section with grass fed beef.  This is great because normally I can only find it at Costco or Sprouts, which are not near my house. I picked up a few of the ribeye steaks.  The price wasn’t bad either. Ross grilled these up (with Omaha steak seasoning on them) and we had cauliflower sauteed in butter, canned green beans, and baked microwaved potatoes on the side.

Check out these red and yellow cherry tomatoes from our garden!  There were more ripe ones than Nick and I could eat while picking, so we brought some in the house.  They are delicious!

Rio doesn’t like tomatoes (is this kid related to me?!?!) but she likes most other food.  In this picture I think she is eating a hot dog and some chips.  Isn’t she cute with her little whale tail?

Nick’s 4th Birthay was on Friday, but since Ross didn’t get home until later in the evening we had a cake and birthday dinner with the grandparents on Saturday night.  We also invited over his BFF from daycare to eat with us and watch a movie in the backyard on the projector.  Nick told me he wanted a chocolate cake with strawberries, so I made this Especially Dark Chocolate Cake and made a strawberry filling to put between the layers.  I thought chocolate frosting might be too rich, so I made this Cloudburst (Butter Roux) frosting instead.

My baby boy has grown so fast, and at the same time it feels like he has been a part of our lives for so much longer than 4 years.  Nick is loving, funny, and smart. He is a wonderful big brother and my best pal.  I could not be more proud of him!  xooxoxo

We are enjoying having Ross home this week, and he and I are catching up on a couple of episodes of Game of Thrones.  I love this show!  We’ve fallen quite behind in our Dexter watching…..it’s just so hard to find time lately, especially with Ross traveling so much.  I have been staying up on my book club books though. Right now I’m reading Brain on Fire: My Month of Madness by Susannah Cahalan.  It’s fascinating!

I have a measly little goal to complete 3 20 minute workout videos this week. I’ll report back in my next post. That has to be manageable, right????
