One Good Trip Deserves Another

Oh Santa Barbara, how I love thee!

Most days I fees totally content with our decision to leave Santa Barbara and move to Arizona, but every now and then I miss it so badly and I wonder what in the heck we were thinking.  This usually happens when I head back for a visit.  This trip was no exception.  Touching down in SB and getting off the plane felt like saying hello to an old friend.  Everything down to the smell of the air is so familiar.

I landed at about 6:00 and wasted no time in heading to my favorite sushi restaurant in Goleta, Takenoya.  They have a large menu and I have never tried most of it because there are two items that I have to order every single time.

The Green Dragon Roll – California roll topped with Albacore, and some tasty delicious relish type stuff……I have no idea what it is.  This is my favorite roll of all time!

Spicy Pan Fried Garlic Edamame – I always look for something similar to this when I go to Japanese restaurants, and never find it.  It’s a little bit spicy and my mouth burns the whole time I am eating it, but I can’t stop because it’s SO good.  It should be noted that I  have a similar problem with Flaming Hot Cheetos.

I yip yapped about how much I love Takenoya in the office so much on Monday, that some of the gals and I decided to go there for dinner again!  Nina, my lovely friend, co-worker, and roommate/hostess for this trip snapped this picture of a tray of rolls we were sharing.  Sushi love!

I was so pathetic at remembering to take photos in SB.  I ate amazingly delicious meals at Petros, and Root 246, but didn’t snap one picture!  :(   Other yummy dining spots included Paula’s Pancakes, Fresco, and the Pizza Shack in Santa Ynez (they have the best BBQ chicken salad!) While having lunch at Paula’s Pancakes in Solvang with my audit team I happened to meet a man and a young girl who live up the street from me here in Goodyear.  Crazy, right?

I did get a couple of (not very good because I was afraid to turn on the flash) shots at Avant, in Buellton. It’s one of those restaurants where they have the wine machines and you stick a little card in as you go along and choose which ever ones you want to taste or buy a glass of.  I tasted three.

The beautiful Miss Nina was my dinner company!  She was so sweet to let me stay with her and her spunky kitty Madison.  I had a blast hanging out with them!

Nina and I ate a lot of things at this dinner….one of them being this Mac & Cheese that we shared as an appetizer.  Super gooey and delish!

Being in SB was fun, relaxing, and productive at the same time.  I forgot what a luxury it is to be able to just stay in the office and work late on something, without watching the clock to pick up the kids and worry about feeding the family.  :)

I sure was happy to see Ross and the kids when I got home though.  The weather is awesome right now and we spent most of the weekend playing outdoors.  Check out my handsome man….how could you not fall in love with that face?  xoxoxo

On Sunday a little friend came to visit and play for a few hours.  The kids took turns pushing each other in the cozy coupe.

I will be heading out of town (to New Orleans!) again in at the end of this week, so the meals at home this week have been pretty much a scavenger hunt.  I want to use whatever is in the fridge and not buy a lot of groceries before I leave.

The only really noteworthy thing on my plate this week was these blueberry biscuits. I was inspired to try making these by another blueberry biscuit recipe that I saw on pinterest.  They turned out great!

I don’t make biscuits often, but when I do I use this super simple 7-up method which has never done me wrong. I decided to try to modify it to add the blueberries, rather than to try a whole new recipe. I made a half batch, so the ingredients were:

1 cup Bisquick

1/4 cup sour cream

1/4 cup 7-up

Approx. 1/2 cup frozen blueberries

Approx 2 TB white sugar

I mixed these ingredients to form a wet dough, then patted it out with some extra Bisquick and cut them using a small biscuit cutter.  I melted about 2 TB of butter in a glass pie pan and then laid the biscuits in the butter and put them in the oven at 450 for approx 12 minutes.  I then took them out, flipped them over, and put them in for about 2 more minutes to get the bottoms crispy.  I made a quick glaze using the juice from a freshly squeezed orange mixed with powdered sugar, and drizzled this on top of the warm biscuits.

The best part was that even though I ate about 1.5 biscuits (Rio and I shared the plate in the picture), my 1 Hour After Meal Blood Sugar was 116!  (goal < 140)

I have to confess that the kids and I have eaten out the past couple of nights.  On Monday night we had Subway and I had a pretty good salad there.  Tonight we ate at a place called Native New Yorker and I had an asian chicken salad that was just ok.  Maybe it would have tasted better if I wasn’t preoccupied with Rio being fussy for the whole meal.  :/

Also, you may have noticed that I didn’t report many blood sugar readings from this week, and that’s because I didn’t take many.  I had my testing kit in my purse all week, but was terrible about remembering to test.  Being out of my home element really was a challenge for me on that end.

Tomorrow will be a very busy day, and then I’ll be out of town again for a few days.  Hopefully I will manage to take better pictures in New Orleans than I did in Santa Barbara, and maybe…..just maybe, I’ll do better at testing my sugar too.  :)
