Helloooo!

Hello world!  I can’t believe how much time has gone by since my last post.  I definitely didn’t intend to take this long of a break.  Our trip to New Orleans was awesome but then we came home to two sick kids and a nice long visit from my Dad over Easter.  My Dad and the kids squeezed in a lot of fun in a week and a half!  Now we’re just trying to settle back in to our “normal” routine, but Ross and I are both busy at work and Nick started his first season of T-Ball on Saturday, so we’re going to be staying busy!

I’ve been terrible about tracking my blood sugar for the past couple of weeks, and when I’m not tracking it’s so easy to let it get out of control.  I’m committed to getting back into the routine of tracking and posting my results though.  I’ve been feeling overwhelmed about where to start posting again, so I’ve decided to just delete the pictures from the past few weeks and start small!

Last night (Sunday) we had dinner on the patio and watched Rise of the Guardians on the projector.  It wasn’t quite dark yet when we started, so the picture here isn’t very clear.  The weather was beautiful!

While we watched the movie we munched on roasted pork tenderloin with an apricot-mustard glaze.  The side dish was roasted butternut squash and swiss chard with walnuts and feta cheese.

I snapped a few garden pictures before the sun went down.  This gazania plant has the most beautiful orange flowers, but unfortunately they had closed up for the night already.

I actually intended to do a blog post last night, but then decided to use my time to do some food prep for the week instead.  I’ve been wanting to make these mason jar salads for a while now.  I made two garden salads with protein ranch, and two Asian type salads with this ginger dressing.   I had one of the Asian salads for lunch today and it was yummy, but I used too much dressing.  The best part was being able to shake it in the jar to evenly distribute the dressing.

I also made some watermelon rosemary water from these recipes on The Yummy Life.  I didn’t use as much watermelon as it called for, so maybe I’ll add some more to it tomorrow.  The water is good, but the rosemary flavor is definitely stronger than the watermelon.

Today for breakfast we had eggs + beaters scrambled with spinach, mushrooms, and laughing cow cheese.  The toast is a cinnamon bread that we usually use for French toast.

This broiled tilapia parmesan is a favorite recipe of ours.  We had it tonight for dinner with roasted asparagus and baked microwaved potatoes.

There it is…..my first big toe back in the blogging water.  I hope to post at least a couple more times this week.  Also, I have a goal to complete a few short exercise videos.  My workouts have been pretty much non-existent lately.

    It’s Marian….I too am pre diabetic I had my Glucose tested after fasting and it is high Normal. I too need to start watching my carbs. The 30 grams is for each min meal?

    • Hi Marian! I’m so glad you stopped by and commented! Sorry I haven’t been on as much as I should be lately. Yes, I aim for 30g with each meal and 15g-30g for snacks. My doctor allowed 45g for me with dinner while I was pregnant with Rio, but I was taking medication then to decrease my blood sugar. :)
