On the Mend (again)

Well, whatever disease I thought I had beat over the weekend came back and attacked me on Tuesday morning and I’ve been feeling downright crappy for the past two days.   As a result, I haven’t been consistently photographing my food or tracking my blood sugar levels.

Here are a few highlights from yesterday and today:

Whole wheat pasta with marinara and fat free ricotta, with roasted turkey breast and pan sauteed zucchini, adapted from a Weight Watchers recipe.  Rio grubbed down on this pasta.  I think she ate more than I did!

I’ve been drinking lots of green tea and green rooibos tea.

The leftover turkey breast was converted into a sandwich today, with jalapeno yogurt, lettuce, and cucumbers.

Tonight we had barbecued chicken breasts and mangoes with roasted carrots, steamed sugar snap peas, and baked potatoes.  The carrots were roasted with olive oil, salt and pepper in the oven at 450 for about 15 minutes.  The sugar snap peas were the steam-in-the-bag kind.

I did test my sugar after this dinner, because I was starting to feel more normal this afternoon.  Hopefully I really am starting to get better and it wasn’t just the advil tricking me.

2 Hour After Meal Blood Sugar = 113 (goal 120)

Yesterday (Tuesday) afternoon Ross and I went to lunch at a bar down the street called Waddell’s.  I ordered a chef salad which was the biggest salad I’ve ever seen.  I probably ate about a third of it.  Why do restaurants serve dishes that large??

Starting tomorrow, if I’m feeling well enough I want to participate in the BodyRock TV 30 day challenge, where you do their daily 12 minute high intensity interval training workout every day for 30 days.  They say a new challenge starts tomorrow, but really I don’t see why you couldn’t just do it starting on any day you wanted to.

Ok, well I got about 9 hours of sleep last night and still had to force myself out of bed, so I’m going to try and get another longer night in tonight.  Apparently I need it.
