Well, here is another LONG 4 day recap post.
Friday was a crazy busy day between work and getting ready for our weekend trip to Blythe. Breakfast was a quick scramble of eggs + beaters and leftover carnitas, with toast and a mocha latte (coffee, splenda, cocoa, milk.)
Luckily I had a little bit of coconut spinach and chickpeas and brown rice left over in the fridge, because I didn’t have time to make anything else. I chopped up some raw veggies on the side.
1 Hour After Meal Blood Sugar = 129 (goal < 140)
After getting some work done I made a pumpkin smoothie to fuel me for the drive! I adapted a recipe from my Vitamix cook book. it was canned pumpkin, a little bit of cream cheese and milk, splenda, vanilla creme liquid stevia, pumpkin pie spice, and ice. It was not bad. Next time I might try to cut out the splenda and use a banana as the sweetener and either protein powder or greek yogurt for more protein.
We made it to my Mom’s house just in time for dinner. They had some slow cooked beef ready which we shredded up and made tacos out of. They were so good. I had 3! I ate one quick before I even remembered to take a picture.

We had a great night hanging out with my Mom and Tom, and luckily Rio slept in a little bit on Saturday morning, so we didn’t get up until about 8 (CA time!) Being at Mom’s house is a great vacation! They are constantly entertaining the kids, and Mom does all the cooking.
For breakfast we had eggs, potatoes, sausage and toast. On the corner of the toast in the pictures you can see that I was sampling my new jar of bacon jam, made by my friend Danielle. She started a jam business called Sticky Fingers Jam. Check out her website here.
Tom took Ross and I out in the desert to do some target shooting. He brought some cardboard boxes and a few other things to shoot at. We had a great time.
I tried out the landscape mode on my camera. It was pretty hot for February, and eventually I had to take shelter in Tom’s truck because I could feel a sunburn coming on. I forgot to put on sunscreen!
When we got home Rio was up from her nap and we played with the kids outside.

The kiddos know that all the cool stuff is in G-Pa’s garage.
Tom grilled some delicious salmon for dinner. One of his friends brought it from Alaska. It was very very good! Thanks Tom!
2 Hour After Meal Blood Sugar = 115 (goal < 120)
Super Bowl Sunday:
Tom brought in breakfast burritos on Sunday morning, so you know I had to get the machaca one. It was good, but not a match for Senor Taco! Then we got ready and got on the road as quickly as we could so that we would be home in plenty of time to watch the Super Bowl and make dinner.
Nick snacked on a veggie tray while I made buffalo chicken dip (I forgot to take a picture of it) which we ate with sliced french bread and veggies. I also cut up a whole pineapple that I had on hand. These snacks made up our “lunch.”
Rio was cracking me up. She dragged the boppy around to different rooms and would lie down on it for a few seconds before getting up and moving it again. Here she is in the kitchen…
and over by the front door. Silly girl!
Ross’ parents came over for the game and dinner. I took some marinated ribeye steaks out of the freezer when we left on Friday so they would be thawed by Sunday. They were so big! Nick, Rio, and I shared a half of one steak! I also roasted some asparagus in the oven with olive oil, salt, and pepper, and smashed some red potatoes for the sides.
1.5 Hour After Meal Blood Sugar = 131 (goal < 130)
Ross’ parents brought donuts with them, so after I put Nick in bed of course I ate one! :/ I never buy donuts because they are too good! I could not resist. Plus, they brought a lemon one over that they specifically picked out for me, so I didn’t want to be rude.
Since I still had some fresh pineapple chunks left from Sunday I decided to do another pineapple based smoothie. I used (for Ross and I) pineapple chunks, 2 oranges, approximately 2 frozen bananas, unsweetened almond milk, and a scoop of vanilla whey protein powder.
The kids headed to daycare I got busy getting some work done and trying to get organized for a shopping trip to Fry’s. Their mega event is going on and there is a lot of sales to sort out.
I broke for a turkey and american cheese sandwich on whole wheat bread with mayo and mustard, and I polished off the vegggie tray from Sunday.

At some point in the afternoon I got an email reminder about my book club meeting and realized that it was scheduled for 6:30 instead of 7:00 like usual. I had to scramble around to get my grocery trip in and get dinner on the table in time for the meeting. Luckily I had a frozen lasagna from Costco in the freezer which I was able to throw in the over before I picked up the kids. I quickly chopped up a salad and tossed some frozen garlic rolls into the oven.
Rio and I shared this. For the record, she ate at least half of this lasagna, and then I got her another big slice. She loves lasagna!
I didn’t test my sugar at the meeting. When I got back I snacked on a string cheese and a dark chocolate sea salt brownie! I made them to take to the meeting, but I started too late and they didn’t set up in time. Best brownie recipe ever!!!
This book club meeting was a special one because one of our long time members gave a presentation and did a reading from her book titled First Love, Last Dance. Nancy (the author and book club member) is an amazing and entertaining woman. I love having her as part of our group. I’m excited to read her book. She gave us all copies!
We also discussed our recent book selection, Warm Bodies. Most of the group liked it a lot. I definitely did. I’m hoping Ross and I can make time to catch the movie while it is still in theatres.
On the BodyRock Challenge front, I’m sad to report that I did not do any of the workouts over the weekend. If this was the “30 day, off and on, when it’s convenient for you challenge”, I’d be rocking it! I need to do better. (sigh.)
I’m going to make an honest effot to increase the frequency of my posts. The more often I post, the more my blood sugar and food intake stays in the front of my mind.
