We made it through another week with Ross being out of town, and now I’m packing my bags to head to Santa Barbara for work this upcoming week.  March is a crazy travel filled month for us!  I’m excited to see all my SB friends, but am starting to get a little anxious about being away from the kids.  I know from experience that the anxiety dulls as soon as I get out of town!  :D

This wasn’t the most exciting food week since it was just the kids and I.  We had some not picture worthy sandwiches and soups for dinners, and I ate a lot of leftovers for lunch.

Highlights from Tuesday – Saturday:

High fiber hot cereal made with unsweetened vanilla almond milk, with a few drops of vanilla liquid stevia, unsweetened coconut, walnuts, and cinnamon.

1.5 Hour After Meal Blood Sugar = 119 (goal < 130)

Twin breakfasts….two days in a row!  Eggs + beaters with mushrooms, bell peppers & spinach, with quinoa pancakes heated up in the toaster.  I used this recipe for Quinoa Power Pancakes, and they were delicious.  This will be my go to pancake recipe whenever I quinoa on hand.

And then there’s this guy.  :)   My little grouch didn’t want to look at the camera.  If he’s this cranky now, what are the teenage years going to be like?!?!

I’ve been making lattes with my Aerobie AeroPress every morning.   I put a little bit of half & half and splenda in my cup while I microwave my water.  Then, I add a little hot water to the cup and use my Ikea frother to foam it up.  Then, I make the coffee in the AeroPress which empties right into the cup.  I took this picture right after adding the coffee.  It looks funny!  Then I add some more hot water to top it off and stir.  After that it just looks like normal coffee with foam on top.

I had a couple of yummy salads for lunch this week.  This one is a taco salad using some ground beef that I separated when I made the beef enchiladas last Sunday.

I sliced up a piece of leftover chicken breast and had it on greens and veggies with light honey mustard dressing. A green smoothie washed it down.  This was a big lunch.  In hindsight I should have had the salad and then the smoothie a little later, but I would have needed to add protein to the smoothie in that case.

I tried this recipe for carnitas last night (Friday) since Ross came home in the afternoon.   Man, this was good.  The citrus in the sauce gave it a great flavor and the broiling in the end gave it a nice crunch.  I probably could have broiled them for a couple more minutes and it would have been even better!

Tonight’s dinner……Paula Deen’s Chicken Paprika.  I love love love this recipe.  It’s from The Lady and Sons cookbook which was given to me by my sweet friend Emily (Hi Emily!!)  I almost always have the ingredients for this on hand and it’s so easy and delicious.  The sauce is sour cream based.  Yum. We had it with mashed potatoes, and a saute of zucchini, asparagus, and mushrooms.

I got in a few workouts this week.  I’ve been using the Firm Express videos which are 20 minutes each.  I feel like that’s all I can literally spare these days.  I like The Firm videos in general because they are a good mix of cardio and weights.  I have several of their videos.

This upcoming week is going to fly by for sure!  I’ll have my camera and my sugar kit with me, but I probably won’t get a post up until I get back.  I hope you all have a great week!!
