Spring Garden Time!

We had another busy and productive weekend!  Ross came home from Fresno on Friday afternoon, and the kids were so happy to see him!

Here are a few food highlights:

We had this as an early dinner on Saturday, because we headed over to the other side of town on Saturday night for a western themed party hosted by Yelp.  It was a lot of fun, but there were way more food and drink samples that I had anticipated, and my belly was FULL when we left.  We should have passed on dinner!  We couldn’t resist all the samples from yummy restaurants though!

Saturday night’s garlic bread was transformed into toast on Sunday morning (with sausage/egg scramble.) I thought I would be ok with one little piece and some jam….

1 Hour After Meal Blood Sugar = 155 (goal < 140)  Wrong!  White bread + jam = no good, even if small.  :(

Ross’ parents came over on Sunday and we had Smothered Beef Enchiladas.  I tossed canned beans and corn with some salsa on the side.

Today’s lunch! Leftover grilled chicken and salad from Saturday night with light Italian dressing.  I also had some of the leftover penne (not pictured.)

On the way home from daycare, Nick said he wanted to have finger foods for dinner, so we pulled together several leftovers and made some mixed finger food plates.  :)

We spent a lot of time out in the back yard this weekend.  The fruit trees are blooming like crazy!

We finally got over to Lowe’s and picked up some new vegetables and herbs for the garden beds.  These are all various tomato plants.

In the other bed we have basil, oregano, cilantro, thyme, mint, and lemon balm…..I don’t know what lemon balm is.  I accidentally grabbed it instead of parsley.  I guess we’ll find out.  Squirty was supervising, and not doing a very good job of it, because someone snuck a sailboat into the garden!

Nick is so funny.  I told him I was going to do an exercise video on Saturday and he jumped up in a muscle-man type flexing pose and yelled “let’s do it honeybun!”   Then, on the way home from a little carnival on Sunday afternoon I asked him which ride was his favorite and he said “It’s not my job to tell you….it’s your job to guess!”  This kid! He kills me.  :D
