2 Days of Valentine Fun


I was keepin’ it smooooth on Wednesday morning with a fruit and kale smoothie.  This one had two oranges, two frozen bananas, some frozen blueberries and strawberries, unsweetened almond milk, sun warrior chocolate protein powder, and a handful of kale leaves.  Yum yum yum.

1.5 Hour After Meal Blood Sugar = 119 (goal = 130)

During breakfast Rio was demanding the bunch of grapes from the table.  I didn’t want to give it to her because I like to cut up her grapes, but these were very small grapes so I went ahead and caved in.  She ate them all…..right off of the bunch.  She looked so funny biting them all off while trying to keep the stems out of her face.  lol.

Nick munched on a grilled cheese!  I’m like a short order cook in the mornings making this kid something random to eat every day!

My big accomplishment for the day was giving myself a V-day manicure.  :)   Don’t look at the gold paint all over my pinky!

Valentine's Day Nails

Ross and I decided to celebrate V-day a little early and headed over to Scottsdale to catch dinner and a movie at one of those dine-in movie theatres.  It’s such a great way to see movie!  The seats are huge recliners and there is a tray that swivels over you.  They have a full bar and restaurant.  We shared an appetizer that had some “thai bang shrimp” (super spicy), lobster pizza, and a crab cake. Then I had an asian chicken salad for dinner, and we shared a waffle sundae for dinner.  I washed it all down with a cold Blue Moon. Oy!  High sugar heaven.  I didn’t test my sugar during the movie, but I’m sure it was very high!  We saw Silver Linings.  I liked it and thought it was pretty funny.  I love Jennifer Lawrence!


It was back to good ol’ eggs for V-day!  I scrambled eggs + beaters with turkey pastrami and grape tomatoes.  Rio and I shared a piece of parmesan pull apart bread on the side.

1 Hour After Meal Blood Sugar = 125 (goal < 140)

We went to Rubio’s Fish Tacos for lunch with Ross’ parents.  I had their Orange Chipotle Shrimp Salad, which was really good.  I also had a few chips with guacamole and salsa.  This meal was a lot more blood sugar friendly than the chicken bowl I had last week.

Tonight we had our first family “happy hour!”  I told Ross that I want to start doing a kid-friendly finger food buffet type meal each week.  V-day seemed like a good day to start.

We had:

A veggie tray with protein ranch (ranch dip powder mixed in greek yogurt.)

Turkey pepperoni, cheese, and crackers – I really wanted to make heart shaped cheese and pepperoni, but I couldn’t find  a small heart shaped cookie cutter anywhere!!  WTH?

I had to try a few times to get a picture of this because a sneaky little hand kept reaching into the pepperoni!

Pulled pork sliders with balsamic honey sauce – I used this recipe.  The sauce was to die for!  It was sweet and tangy.  As my friend Fiona would say……it had some wang to it!  (Hi Fiona!) I had my meat wrapped in lettuce instead of a bun, because I knew I was going to have dessert, and I figured that was enough cheating for one night!

Crescent roll Veggie “Pizza” based on this recipe.  I had a couple of problems here….I accidentally overcooked the crust, and then I eyeballed the amount of ranch mix because I was making a half recipe, and it came out on the salty side.  It still wasn’t bad though.

And last but not least…….carrot cake cupcakes!  This was the first time I tried this recipe.  It was probably the best carrot cake I’ve ever made, and will be my go-to recipe from now on.   It has pineapple, coconut, walnuts, orange zest, and a strong spice flavor to it…..and, cream cheese frosting of course!  Do you like my fancy decorating??   :D

For the kids….well, just Nick really, I made this pineapple cooler.  The strawberries at the store didn’t look that good, so I tossed in some blueberries instead.  Nick liked it!

Nick Eating our First "Happy Hour" Meal

I am going to try and eat very cleanly for the next couple of weeks because I’ll be taking a trip to Santa Barbara for work, and then going to New Orleans for a few days in March.  I know there will be at least a couple of bad bad meals during those trips, so I need to get in a really healthy groove before then.

I did my BodyRock TV workout tonight!  It was a 4 minute challenge and I did it twice.  If we get ready at a reasonable time tomorrow morning I might bike the kids to daycare too.

I can’t believe tomorrow is Friday already.  How do the weeks fly by so fast?
