Rainy Days

It was a rainy gloomy weekend here in normally sunny AZ.  The rain is so inconvenient and the roads get flooded here so easily, but we have to be happy about any rain in the desert, right?


I switched it up on Friday morning and had 1/3 C of greek yogurt with splenda, 1/3 C of Earnest Eats Asian Blend, diced mangoes and bananas, shredded unsweetened coconut, and a sprinkling of buckwheat groats.

1 HR After Meal Blood Sugar = 150 (goal < 140)   Ugh.  I might have been able to pull this off with a little less fruit or perhaps an apple instead of the really sweet mango/banana combo.  I might try it again with an apple and a little less of the Earnest Eats.

For lunch I had the leftover shredded ranch chicken and leftover grilled eggplant and squash on top of romaine lettuce.  The eggplant and zucchini were soaked in the Korean BBQ sauce that they were cooked with, so they were pretty juicy and served as a dressing of sorts.  However, I could not resist throwing on a dab of jalapeno yogurt.  The flavors didn’t really blend, but I ate the chicken and yogurt from the top first and then had the veggies and salad, so it worked.

I tried out two recipes that I had found on Pinterest for dinner.  I made this Cilantro Thai Grilled Chicken and these Spicy Thai Noodles. We used bone in thighs because that’s what I had on hand and cooked them on the grill.  Next time I will consider doing them in the oven or in a skillet because I thought they lost a lot of the marinade on the grill and I couldn’t really taste the fish sauce or cilantro flavors.   The noodles however, were delicious!  I used whole wheat noodles and added about 1T of crunchy peanut butter to the sauce recipe.  I could not believe how easy and yummy these were.  They would be good as a main dish with a some rotisserie chicken or some pan cooked shrimp.  That would make for a wonderful and super fast dinner! The noodle recipe is definitely a keeper.

After dinner Ross and Nick had to run to the store.  While they were gone sissy had a bath.  Even though she wasn’t feeling that well she had fun in the bath!  The girl loves water!

 Rio was not doing well on Saturday.  Her little nose was running constantly and she just coughed and coughed all day long.  It rained all day on Saturday, so to get Nick out and running around we decided to take a trip to the mall.  Ross’ mom came to stay with Rio during her nap time and the rest of of headed out. 

We stopped for lunch at a Greek place in the the food court and I had a chicken pita with greek salad on the side.  It was pretty yummy.  I tried to tear off parts of the pita as I was eating it and ended up eating about half of it.

When we got home we found out that Rio had hardly napped because of her cough, and she was starting to get a low fever so we gave her some Tylenol and she started to do a lot better after about an hour.  Poor girlie.  :(  

When we decided to go to the mall and have Ross’ mom babysit I quickly had pulled some pork chops out of the frezer.  I was originally planning for us to eat a buffet of leftovers, but if his parents were going to be over I needed something else.  I usually brine pork chops which makes them so juicy and flavorful but since I didn’t have time I just put them in a quick marinade for about an hour and then Ross grilled them up.  They looked better than they tasted.  Always brine pork chops!  You will never regret that you did it. 

I had a few potatoes on hand and Ross’ dad brought over a cabbage, so those were the sides.  I also made a box of mac & cheese per Nick’s request.  Rio was feeling better by dinner time and ate about 3 good sized piles of mac!

 After dinner Ross surprised me by asking his parents to stick around for a couple of hours and we went over to Gigino’s Wine Bar and Cafe, which we had never been to.  We had some Argentinian white wine.  I didn’t catch the name of it.  It was not bad. I’d like to go back there to eat one day.  Their menu looked yummy.   When we left we walked past the new community bingo building and checked it out.  We didn’t go in though…..we just peeked in and read the fliers on the door.  A lot of people were there!  We’ll probably give it a go one night.


Sunday was the day for cleaning out the leftovers in the fridge.  It started with breakfast which was poached eggs over leftover veggie chili, topped with jalapeno yogurt.

More leftovers were consumed for lunch.  I had leftover tilapia, beans and rice.  I also whipped us up a pineapple banana smoothie.  I used one can of pineapple chunks with the juice, 1.5-2 frozen bananas, approximately .5 cups of plain greek yogurt (all I had), 1 scoop of vanilla protein powder, and ice.  We both liked it.

On the exercise front, I managed to squeeze in my BodyRock TV challenge workouts.  Luckily they are short.  On Friday night the workout had these one legged pogo jump exercises, and my butt is still sore!  :D
