I’ve been posting so many days behind lately, that I almost can’t figure out what day I’m writing about.   Thursday…..I think.  :)   I want to post more often, but I’ve been trying to go to bed earlier to shake the last of this cold (which hasn’t been working) so I haven’t had as much time to post.  Dang cold.  I just can’t shake the last of the sore throat and cough, and now Nick’s cough has really kicked up.  :(

Anyway…..Thursday morning:

The morning and afternoon were busy with lots of work.  I had a ham and turkey sandwich on whole wheat for lunch but I accidentally deleted the picture.  It looked as un-exciting as the other ham and turkey sandwiches that I had earlier in the week.

Dinner was colorful though!  I made Santa Fe Turkey Stuffed Peppers from skinnytaste.com. My proportions were not the same as hers since I decided to just use my whole package of turkey, cans of beans and corn, etc.  I assembled them very quickly and popped them in the oven before I ran out to pick up the kids, and then they were almost done by the time we got home and got everyone’s juice cups in hand.  Those kids come home so thirsty every day!

I had a yellow one and a green one, with dollops of sour cream on top .  We had a simple mixed greens salad on the side, with carrots, celery, and ranch.

Friday Morning:

I finally got around to trying protein pancakes.  I looked at a few recipes on the web and I ended up using parts of a couple different ones. I put the following into the Vitamix:

1 Cup of Egg Beaters

2 Egg Whites

1 Cup of Rolled Oats

.5 Cups of Plain Greek Yogurt

1 Banana

2 tsp Sugar

1 tsp Vanilla

1 tsp Cinnamon

I blended it all up and then proceeded to make the cakes.  They were good, although they had a definite eggy quality to them.  I spread a very thin layer of Biscoff on them in lieu of syrup.  I would definitely make them again, although I might try a few different recipes and play with adding different things like pumpkin or cottage cheese.

We had to go to Lowe’s at lunch time to pick out a security/screen door for our house and we stopped for sushi at a restaurant  (Tomo) near by. Ross and I shared three rolls.  They were all very yummy!

1.5 Hour After Meal Blood Sugar = 151 (goal < 130)    :P  Damn you white rice!!! I realize that sushi is just never going to give me decent numbers, but it’s a cheat that’s totally worth it!

I put Ross to work at the grill for dinner.  We had grilled mahi mahi and eggplant with Korean BBQ sauce, based on this recipe.  The recipe called for halibut, but I could not justify the price for frozen halibut at Target!  I sautéed some zucchini and yellow squash on the side.  This was a really yummy dinner!

I guess I was feeling too good about my dinner number, because I decided to top off the day’s outrageous lunch results with a batch of cookies!  These whole wheat chocolate chip oatmeal cookies  (from moneysavingmom.com) are my favorite go-to recipe.  The dough balls freeze well and then you can just pop a few in the oven whenever.

It’s late on Saturday night as I’m writing this, but Ross is in bed and the software I use to process my pictures is on the computer in our room, so I can’t upload today’s pictures now.  I think I’m going to just pretend that Saturday got lost in a time warp, and pick up posting for Sunday.   I only tested my sugar once today anyway.
