I Spy With My Pink Eye

It was about 4 am on Monday morning when I woke up and told Ross “I think I have pink eye!”  Actually, being that my kids had it recently and I woke up with my left eye crusted shut, there was no thinking about it……I knew I had it!  :(   This is a disaster for me because I am as blind as a bat and I wear contacts every minute of the day.  I do have a pair of glasses that are a few years old, but I’m not sure that the prescription is 100% right and also I’m just not used to them, so I feel a little “off” when I am wearing them.  It’s Wednesday night now, and after wearing them for three days I’m still not totally comfortable in them!

The past couple of weeks have been a disease roller coaster here with all the ups and downs.  It seems like we are playing musical symptoms here as we all keep swapping germs with each other.  I felt bad for a few days last week, then good for a few and now besides the dang pink eye I’ve also had a sore throat and a cough that kicks up like crazy at night.  I guess all of the stages of the sickness have to run through all of us before we can be totally cured.

Anyway, a pink eyed gal has to eat, so Monday morning we had the small amount of leftover chile verde on top of eggs, with a little bit of tortilla on the side.  Rio ate most of my tortilla though.  :D

It has been SO cold here the past couple of days with highs in the 40s!!  Rio had to break out her fuzzy leg warmers.

After taking the kids to daycare I did a little bit of work and also devised a meal plan and grocery list for the week.  I broke for lunch which consisted of a ham, turkey & cheese sandwich, with jalapeno yogurt and lettuce, as well as a handful of grape tomatoes.

I picked Nick up early and took him to the Walgreens take care clinic with me so I could get another bottle of the pink eye drops, and so we could get our flu shots.  My little guy was so brave and he didn’t cry when he got the shot.  When I got mine he even held my hand to help me not be scared.  :D   He is a crazy ball of hyper boy, but he is also so sweet.

I didn’t feel like making dinner after all that, so we drove through Panda Express on the way home.  I had kung pow chicken and shanghai angus with veggies on the side.  The chow mien on my plate was for Rio, but I have to admit I did eat some!

2 Hour After Meal Blood Sugar = 109 (goal < 120)

Monday night was when I really started to feel my sore throat flare up.  I thought maybe it was due to the flu shot, but then I read some articles online that said it wouldn’t cause that, so I guess my cold was just flaring back up.  :(

On Tuesday morning, I woke up with no eye gunk!  Yay!  Luckily I had the kids’ leftover drops and was able to start taking them right away on Monday morning!  It was still very red though.

I decided to try the Earnest Eats Mayan Blend with Sun Warrior Chocolate Protein Powder mixed in.  I topped it with a few crumbled walnuts and a pinch of shredded coconut (unsweetened).  And……about a teaspoon of Biscoff Spread topped it off.  Yum!  This combo was good, but I think I preferred the Asian Blend/Vanilla Powder combo from a few days ago.

It was another boring day of work and house chores.  I didn’t make it to the grocery store after putting together my big list on Monday, but luckily I had some lunch meat and spinach in the fridge and was able to make a chef salad.  I also had some canned vegetable soup that expired in 2011!  LOL! I didn’t check the date until after I ate it.  It tasted fine to me.  I guess I don’t have a very refined palette.  :D

I had a piece of salmon thawed, so I looked up a recipe for a quick marinade and decided on Ina Garten’s Asian Grilled Salmon. I had a small bok choy left over from last week’s Nature’s Garden Delivered box but I needed to bulk it up so I used my little mandolin to julienne some carrots and broccoli to stir fry with it. The carbs came from Archer Farms’ whole grain blend.

After dinner Ross decided that a fruit smoothie would help cure his ailments, so I threw 1 apple, 1 orange, 1.5 frozen bananas, about .5 cups of frozen blueberries, 1 scoop of Amazing Grass Superfood, some unsweetened vanilla almond milk, and some ice into the Vitamix.  It was a delicious combo.  Rio agreed.  She got mad when I put it away for a minute to take a picture of her smoothie mustache!

1.5 Hour After Meal Blood Sugar = 139  This was a little high because I had a small glass of smoothie about 45 minutes after dinner….so I messed up the timing.  I couldn’t resist though!

And now, we are finally up to today (Wednesday).  We had eggs + beaters with mushrooms, tomatoes, and diced up sausage links scrambled in.  We also polished off the last of the asiago cheese bread, which makes the best toast!

I was really busy with work this afternoon and was on the phone when I was supposed to test my sugar, so it didn’t happen, but I’m sure the number was ok with this low carb lunch.

I did manage to leave early enough to stop by Target and do some grocery shopping on the way to pick up the kids, so I’m all set for dinners for a few days. Today’s featured dinner special was Tofu Parmesan.  I don’t follow this exact recipe, but I make it similarly. We really like this, but I haven’t made it in awhile.  The tofu is coated in bread crumbs and sautéed with a little olive oil, and then you add the mozzarella cheese and marinara sauce, and bake it to brown the cheese.

We had rotini noodles, steamed broccoli and steamed cauliflower with the tofu.  I put a big pile of rotini on the plate thinking that Rio would chow down on it, but she was fussy and didn’t eat as much as usual tonight.

I think I’m starting to feel better again, but I also won’t be surprised if I wake up feeling yucky again tomorrow!  I know I will have to stay out of my contacts for a few more days until I’m done with the pink eye medicine.  I’ll probably get adjusted to my glasses right when it’s time to put the contacts back in!  I decided to put a hold on the BodyRock 30 day challenge until I feel totally better, and I’ve been trying to hit the hay early to get a little extra sleep.  It seems like I could sleep 10 hours a night lately.

I’m watching the latest episode of Nashville on Hulu right now.  It’s getting good!  After this I’m going to catch some zzzzzzzzz.
