Saturday:

On Saturday morning we took the kids to the Phoenix Children’s Museum to burn off some energy, but before we left we had the traditional Saturday morning breakfast burritos.  Machaca for Sissy and I……

 I didn’t test my sugar because we left for the museum right after we ate breakfast and got dressed.

Nick and Rio were bugging me, so I locked them outside.

At the museum Rio played in the baby area under the huge climbing structure.  She likes to climb in it with the big kids, but that means I have to go with her, so I try to keep her down here.

We had to rush home as usual, because it was getting late for Rio’s nap.  After I laid her down I had a ham, turkey, and provolone sandwich on a whole wheat english muffin with some blueberries.

During lunch Nick finished the big 200 piece puzzle!  Yay!

For dinner we had chickpea piccata.  I used this recipe from Hell if I Gnaw.  I didn’t have shallots so I used onion and garlic, and I decided to wilt in some spinach at the end rather than serve it on arugula.  We had it over big piles of broccoli-cauliflower mash which was made with broccoli, cauliflower, cream cheese and S&P.  It made a good low-carb base.  I sliced up an asiago cheese loaf from the Target bakery to mop up the juice.

Sunday:

Here is where the first sausage Sunday incident took place.  For breakfast we had maple links with scrambled eggs and the leftover asiago cheese bread as toast.  It made very good toast, but I had to stick to a small piece being that it was white bread.

After breakfast we bundled up and took a walk over to Ross’ parents house to help them get their new TV hooked up.  The kids nibbled on ham and cheese sandwiches while we were there.  When Rio got tired she and I walked back so I could put her down for her nap and Nick and Ross walked home later.

I didn’t really eat lunch but I snacked on some yogurt with Earnest Eats Asian Blend mixed in, an apple, and some string cheese.

Ross was in charge of dinner, hence the second Sunday sausage incident occurred.  He made sausage patties that he and his parents ate on onion rolls with cheese.

I decided to have mine on some lettuce and tomato because I wanted to have some of the carbalicious side dish….cheesy potato “nachos” with jalapeno yogurt of course!  This was my contribution to the dinner.  :D

2 Hour After Meal Blood Sugar = 90 (goal < 120)

After dinner Nick and I finished the 200 piece US map puzzle again, and we played in his room with Rio.  Rio was trying to say “book” while reaching up toward his bookshelves!  Go girlie!  She hasn’t been talking enough according to her pediatrician, so we are trying to encourage her as much as we can.

Today was an “active rest” day for our BodyRock TV 30 day challenge.  I considered our walk to be the active part.  Tomorrow (Monday) we will have another workout challenge.
