Isn’t it great when you’ve been sick and then you feel better and it’s like you’re a whole new person?  That’s how I felt yesterday (Thursday.) Except for a sore throat and little bit of a cough I felt WAY better.  Yahoo!  Also, this was the first morning in a while where I hadn’t taken some cough syrup the night before, so it was great to not wake up feeling all groggy and sluggish.

One again I was caught without eggs, so I decided to try hot cereal with protein powder mixed in.  Do you remember the Earnest Eats Mayan Blend cereal that I picked up at TJ Maxx several weeks ago?  I posted about it here. Well, at Target I recently noticed that they have a whole section of Earnest Eats cereals, so I picked up the Asian Blend to try. Just like the Mayan Blend it had oats, quinoa and amaranth, but instead of cocoa, pumpkin seeds, and cashews, this one has dried mango and “green tea.”

 I added a scoop of this vanilla protein powder to the whole pot which was two servings.  Ross and I shared it.

I took a picture of it in the bowl with a few chopped walnuts and some shredded coconut on top, but I guess I accidentally deleted it.  :(   Anyway, it was very tasty, and the protein powder sweetened it enough that I didn’t have to add additional splenda or stevia.

1.5 Hour Blood Sugar = 125   (goal = approx 130)  I was right in there.  Yay!

I might try the Mayan Blend with some Sun Warrior chocolate protein powder this week.

After the kids went to daycare I finally got around to unpacking Wednesday’s Nature’s Garden Delivered box. As usual, we received a good mix of organic fruit and veggies.

I had a salad with more leftover lentil loaf on top for lunch, but I scarfed it and forgot to take a picture.  It looked pretty similar to the last one I ate.  The lentil loaf is now history.  RIP lentil loaf.

1 Hour After Meal Blood Sugar – 122 (goal 140)

It was a busy day yesterday because I had some work to do and also our wonderful housekeeper was coming in the afternoon.  I like to pick up most of the clutter and get the dishes all squared away so she can focus on actual cleaning, so it always takes me a while to get ready for her. 

I had tilapia thawed out and I planned to make some brown rice, but I didn’t want to get in her way while she was finishing up in the kitchen, so I wasn’t able to get it started before I left to pick up the kids.  Since Rio is always impatient to eat when she gets home I decided to skip it and we had leftover pasta with marinara and fat free ricotta from the other night instead.  The tilapia was made using this delicious Broiled Tilapia Parmesan recipe.  I realize that the butter, mayo, and cheese somewhat negate the healthy properties of the fish, but I used less topping than the recipe calls for and a lot of it falls on to the pan while cooking, so you are actually only getting a little bit of the bad stuff.  You should all try this recipe.  Ross and I both love it.  Frozen steamed peas rounded out the plate.

I hit Target on the way to pick up the kiddos and picked up a new 100 piece puzzle for Nick while I was there. His last one was 60 pieces and he busted right through it so I’m gong to keep upping the piece count on him.  We put it together after dinner.  I did about 5-10 pieces and he did the rest.  I give him helpful hints as he goes along like reminding him what color or pattern we are looking for (basically trying to keep him focused) or talking about how edges and corners are different from the inside pieces, but he doesn’t need a lot of help.

I had eggs on hand again this morning (Friday) thanks to my Target trip, so we had scrambled eggs + beaters with diced up green peppers, mushrooms, and tomatoes.  I melted one piece of Kraft American cheese over the whole pan which was just enough to give it a hint of cheese flavor.  Cheese essence, if you will.

Rio and I shared these eggs and a whole wheat english muffin (23g carbs).  Well, actually Rio ate some of this and most of Nick’s eggs that he didn’t finish, but who’s counting?? Seriously, I don’t know where she puts it.

At the suggestion of one of the ladies in my playgroup, Ross and I decided to start the BodyRock TV 30 day challenge today.  Each day they will post a workout that you are supposed to do.  I believe they will all be in the 12 minute range or so.  Today’s workout was a “fit test” where we had to do 12 different exercises and record how many we could do of each in a 50 second time period.  Here is the link to the workout on You Tube.  Fit Test – HiitBody #3

I was so glad that Ross was there struggling with me, because I at least knew I wasn’t the only one who found these exercises to be amazingly difficult.  Here are my sad results:

On the last day of the 30 day challenge we will revisit this test and see how we compare.  :D

After my stomach settled from all the jumping I hunted around in the fridge and came up with this spinach salad topped with the lone leftover piece of tilapia from Thursday night, carrots, cucumber, grape tomatoes, peas, and….wait for it…..jalapeno yogurt!

Ross and I stopped working a little early this afternoon to run a few errands and then after we picked up the kids we decided to have Senor Taco for dinner.  I had planned to make chickpea picatta, so it looks like we’ll be having that tomorrow. 

I ordered the Chile Verde plate, which I’ve never had before.  It was pretty good.  I took about half of it home to have with eggs one day soon.  :) I did eat a pretty good sized tortilla that came with it, and a little of the beans and rice.

We grabbed another new puzzle for Nick tonight which has 200 pieces!  He started it before bed but didn’t finish it.  I wanted to take some pictures of the kids tonight but my camera battery was dead.  :(   Oh well.  We’re planning to go to the Phoenix Children’s Museum tomorrow morning, so there will be photo opportunities there. 

I had some hot tea a little earlier to help my sore throat, but I think I’m going to skip my night time snack and just hit the hay now.  I hope I’m not crazy sore tomorrow!
