Sunday Sunday…..

We all seemed to be in good health yesterday.  I woke up feeling a million times better than on Saturday, and the kids’ eyes looked totally healed.  A jalapeno sausage celebration was in order!

The sausage was scrambled up with some eggs + beaters and a tomato and was served with whole wheat english muffins.

The whole gang (me, Ross, Nick, Rio, and Squirty) went for a walk around the neighborhood after breakfast.  It was cloudy and cool out.

For lunch we had Saturday night’s  pork chops diced up with some BBQ sauce over a salad of lettuce, kiwis and clementines.

While Rio took her nap Nick and I hung out in the kitchen. He played a game on my Nook while I got a lentil loaf ready to go in the oven. When Rio finally woke up we put the kids in the bike trailer and took a ride around the neighborhood.  We stopped at one of the little parks for a few minutes to let the kids slide.  Rio is just starting to like slides and she always goes for the biggest one which means I have to accompany her over and over and over!  :)

After our bike ride I put the lentil loaf into the oven, heated up some canned green beans, and made mashed faux-tay-toes out of cauliflower and cream cheese.  Since this main dish is made primarily of lentils and oatmeal it is somewhat high in carbs, so I wanted to have the side dishes be very low carb.

And then…..Monday came too soon!  Actually, Monday was semi-welcome this week since we were cooped up at home for the last four days.

Monday Statistics:

Fasting Blood Sugar = 114

Weight = 189.5

The kids were happy to see their friends at daycare today!  I came home and got some work done, then……lentil loaf salad for lunch!

I heated up a couple of slices of lentil loaf, and had them on top of lettuce, carrots, and green peppers.  That orange glob in the middle is Skotidakis Jalapeno Greek Yogurt.  I couldn’t resist!

For an afternoon snack I had about .5 cups of lentils that didn’t make it into the loaf.  I mixed in a few spoonfuls of salsa for moisture.

Ross invited his parents over to watch the BCS Championship game tonight, and they brought over some deep dish pizzas from Costco.  They also delivered a freshly cut and washed Squirty!  We had them take her for a bath and haircut today.  They are the best doggy-grandparents!

While I was making a salad to go with dinner I taught Rio how to eat olives from her fingers.  She ate about 12 and then I had to cut her off!

Luckily I had to rush out after dinner to my book club meeting, or I would have been temped to have another slice pile.

2 Hour After Meal Blood Sugar = 115 (goal 120)

The book we discussed tonight was Gone Girl by Gillian Flynn.  It was dark and twisty, but totally addicting.  I really liked it, except for the end which was just downright disturbing.

When I got home from the meeting I had a sliver of pumpkin pie (Ross’ parents brought it), and a few bites of the meaty cheese pizza for protein.   Not exactly a healthy snack, eh?  I’m sipping on a cup of Adagio Green Rooibos Citron tea with splenda right now. It was in my Green Rooibos sampler pack  It’s very yummy.

Nick’s random funny comment of the day was that when he grows up he wants to be a man who sells fruit trees.  I said “fruit trees?” and he goes “yeah, like peach, apple, pear…..fruit trees!”  :D

We finished Season 2 of Game of Thrones, so now we have to wait for the new ones.  We should have rationed them out better because now I’m in withdrawal mode!  We watched Revenge instead.
