It’s Always Something…

One day I’m going to get everything done that I plan to, and then I will probably fall down and die from shock because this seems like an impossible task.

Yesterday (Wednesday) started out normally enough.  The last of the leftover corned beef was scrambled up with eggs + beaters, and leftover green beans.  This was combined with cottage cheese with salt and pepper.  I know most people like their cottage cheese with fruit or jam or something sweet, but I only like to eat it in a savory fashion.

Since I’m not that busy with work and most of my department is out on vacation I decided to take the day to work on this blog, start reading my new version of WordPress for Dummies, research plugins that I want to use, etc.  I also wanted to make a meal plan for the rest of the week and go grocery shopping.

One of my 2013 goals needs to be having a lunch plan for every single day.  We had nothing here so Ross and I headed out to a restaurant called Augie’s. I had their Cobb salad, which was good, but getting there, eating, and coming home took out a large chunk of the day and set me behind (more than I already was.)

When we got back I did a little more work on the blog and then it was 4 o’clock already. I didn’t have time to make a meal plan and grocery shop, so instead I convinced Ross to try this 15 minute workout by Shaun T with me. It kicked our butts, but we completed it (mostly!)  After that it was time to jump in the shower and pick up the kids.

Since I didn’t make it to the grocery store or form a meal plan we decided to go to Costco and eat dinner somewhere near there.  We ended up at Jimmy John’s.  I had a ham and cheese “unwich” which was wrapped in lettuce rather than bread.  I was going to get the 7 grain bread but decided to go this route so I could have some salt & vinegar chips too!

While in Costco we noticed that Nick’s eyes were getting really yucky in the inside corners and we started worrying that he might have pink eye.  It was about 7:30 as we were checking out so we decided to speed over to the nearest urgent care which closed at 8. We made it at about 7:50. You would not believe how busy it was.  We waited for an hour to get in, and about 15 minutes before he got called we started noticing that Rio’s eyes were getting red and gunky too!  Well, they both have pink eye of course.  :(

So today (Thursday) the kids are home and they’ll be home again tomorrow too.  My poor babies.

Since I didn’t make it to the grocery store yesterday, we had no eggs for breakfast.  I made a tofu scramble instead.  I love this and I should make it more often to switch things up.  I worry about too much soy though, so I wouldn’t want to eat it every day.  I made it southwestern style with 1 block of extra firm tofu, chili powder and cumin, half of a zucchini, canned black beans, canned corn, cheddar cheese, and S&P.  At Costco last night I picked up 3 tubs of the Skotidakis Jalapeno Greek Yogurt, so I had a big dollop of that on top.  I also had a few red grapes.

We played outside for a little while before lunch.  Nick’s eyes don’t look too bad…….

But poor Rio’s eyes are so red and puffy!  She looks like she was in a bar fight.   :)

They didn’t wake up with super crusty eyes this morning, so that’s good.  I’m hoping we caught it so early and got on the medicine that we can maybe avoid that part.  Ick.

I had a few chicken thighs in marinade that I had pulled out of the freezer yesterday morning that were finally thawed, so I sauteed them and we had them over salad greens with diced carrots, zucchini, and a small chopped apple.  Light honey mustard dressing was drizzled on top. The zucchini I got in my Nature’s Garden Delivered box this week was huge.  After eating it for breakfast and lunch I still have about 1/4 left!

I also ate part of Rio’s unfinished quesadilla which I calculated to be about 10g of carbs.

On a random note, we picked up this wine rack at World Market and it fits like a glove in our new shelves.  The shelves have not yet been deemed “cured” (the paint) by Ross so I haven’t officially started moving stuff on to them, but see how they are accumulating clutter already?!?!  This also seems to be the new bar area ever since our Christmas festivities. There was no room on the kitchen island, so all the alcohol came over here.  We are thinking about getting another wine rack to put on the right side to make it look better, but there is no way we would ever have a need for that much wine storage, so I’m hesitant.  I don’t want it to be wasted space.

I’ve been trying to figure out other things that can be stored in a wine rack.  I have wine glasses, place mats, and a plastic container which has disposable champagne flutes in it.  Any other ideas?

See that bottle on the right hand side of the picture below?  That’s a bottle of Rock & Rye, which apparently is some kind of whiskey with rock candy in it????  Ross’ mother says it’s the best remedy for a sore throat.  I’ll never find out.  I’ll stick to the advil or nyquil please!  :)

I was pretty hungry at about 4, so I had a good sized snack. I had one half of a Nature Valley granola bar, a small apple, a babybel light cheese, and a few peanuts.

Rio was so cute this afternoon.  She climbed into her rocking chair and was trying to make it rock back and forth.

For dinner we had a deep dish pizza from Costco.  Ross was out of town the last time my Dad and I had one, so he didn’t get to try it then.  I didn’t want a meaty/cheesy salad to go with it so I just tossed some lettuce with red grapes, walnuts, and light balsamic dressing.

1.5 Hour After Meal Blood Sugar = 105

The kids and I polished off the last bit of double chocolate moose tracks ice cream right from the container for dessert.  :)   It amounted to a few bites each.  When I told Rio “all gone” she threw her hands up and looked at me like WTF??  :D   She takes after her mama with the love for ice cream!

My legs have been sore all day from that dang Shaun T 15 minute workout.  That means it worked!  I wanted to take the kids for a walk after Rio’s nap, but she ended up sleeping 4 hours and we ran out of time.

We are starting Game of Thrones Season 2 tonight!  Bring it on Lanisters!
