Keeping Busy

A chess club threw a party at a hotel. Afterward, several members were standing in the lobby discussing their recent tournament victories. After an hour, the manager came out of the office and asked them to leave. After they left, the manager’s assistant asked, “Why did you make them leave?”

“Because,” the manager replied, “I can’t stand chess nuts boasting in an open foyer.”

:D

Yesterday (Friday) I had one of the most delicious breakfasts of all time.   We had some of the leftover chili verde from Thursday night on top of eggs, with a wee bit of beans and rice on the side.  I put a dollop of the Skotidakis Jalapeno Greek Yogurt on top rather than sour cream.  I tell you, I could eat this every day!

It was blood sugar friendly too!

My Dad, the kids and I all hung around the house in the morning and played out in the back yard. For lunch I broke out the last package of our Omaha Steaks hot dogs and served them with some veggie crudite and more of the jalapeno yogurt.  (You may see this yogurt making an appearance at every meal!)

After Rio woke up from her nap we all headed out to Playgrounds Fun Zone in Glendale to play for a couple of hours.  I forgot to bring my sugar kit with me so I didn’t get an after lunch read.

This was the first time that Rio really got into the toddler area and played.

Nick was on the move……this was the only picture I could get of him!

Sissy is much easier to catch on camera.  It took her a little while to work up the guts to climb through this tube, but then she did it and had a blast!

Little girlie started getting tired again.  We stayed until the place closed at 5 though!

Back home we had a deep dish pizza from Costco waiting to go in the oven.  This was sort of a Chicago style pizza that was super deep and filled with meat and cheese.  Since the meat and cheese outweighed the crust it didn’t give me high sugar.  Rio and I shared this pizza.  I also threw together a salad of romaine, spinach, sliced salami, and cheddar cheese.

I did’t get a post up last night because I decided to do some present wrapping instead.  I’m almost done now! Yeah!

Saturday morning we got up, got dressed, and piled in the car to head out to the Phoenix Children’s Museum.  On the way we stopped at McDonald’s and I had an order of scrambled eggs with about 1.5 sausage patties.  (Rio and I shared 3.)  I also had a medium sugar free iced vanilla coffee, which as 11 carbs.  This is a low carb treat!

Everyone had fun at the museum.  Rio likes this room with the different ramps and balls.

This one has a little chain of car-things that worms its way down the pegs.  It’s pretty cool.

Nick made me some pizza and some salad dressing in the kitchen room.   :)

When we got home the kids ate last night’s leftover pizza for lunch and I had the leftover salad. I added some diced up ham and light honey mustard dressing.  I also snacked on some cheese and crackers over the next hour.   I forgot (again) to test my sugar.  Today wasn’t a good day for testing!

Nick lined all of “the friends” (his toy story toys) up in front of the tree and I asked him to sit next to them for a picture.  He did it, but wouldn’t smile.  I’ll remember this when he is 16 and wants a car.

My Dad made a sort of chicken pot pie for dinner, and I also cooked up this broccoli “cheese” soup. My version wasn’t vegan because I used chicken broth instead of vegetable, since I had it on hand.  This was my first time making this soup, and it totally exceeded my expectations.  It was SO good.  The base is made from cashews, but you would never know it.  My Dad said he never would have guessed that it didn’t have milk/cream or cheese.

Here is my Dad’s chicken pot pie in the dish:

And in the bowl…….this was total comfort food!  He made it with diced up chicken breasts, frozen veggies, cream of chicken soup, and Bisquick.  So easy!

After dinner Ross decided to head over to Fry’s Electronics, which is about 30-40 minutes away and I joined him.  In the chaos guess what I forgot……..to test my sugar!! Argh!  I’ll do better tomorrow!

At Fry’s I picked up a little bag of chile limon peanuts and snacked on them in the car.  When we got home I tried out one of the little mixer drinks (raspberry martini) with the whipped cream flavored vodka that I won a few weeks ago in a white elephant exchange.  It was tasty, but very sweet.  I ended up putting some sparkling water in it to cut the sweetness.

I just remembered that I have to go move the Elf on the Shelf.  I’m going to try and sneak him into Rio’s room.  I forgot to post that when we first got the elf Nick wanted to name him Marlene!  Isn’t that funny?  We don’t even know anyone named Marlene! That was before he decided on Birdie.  Anyway, I’m going to go move Birdie and then move myself into bed.

Merry almost Christmas…..talk to y’all soon!
