Fasting Blood Sugar = 120  Again!  I checked it just because it was high the past couple of days.  I don’t know if my hormones have gone wacky or what.  :/

Ross decided this morning to head out to Laughlin with his parents for a couple of days, so my Dad and I held down the fort. Before he left I scrambled up some eggs + beaters with a few large handfuls of spinach and shredded cheese.  I paired mine with a slice of Ezekiel cinnamon raisin bread with a smidge of Biscoff spread.

I think I tested my blood sugar after breakfast but forgot to write it down.  I can’t remember anything these days if it’s not on paper!  :(

It was pretty ho-hum here today after the kids left for daycare.  I had some work to do and my dad did some present wrapping.  We broke for lunch and had these “chef salads” made with romaine, spinach, carrots, celery, sliced ham, salami, and cheddar cheese.

For a dressing we used some of this Jalapeno Greek Yogurt dip that I got at Costco yesterday.  This yogurt was recommended to me by a friend (hi Dawn!) to use as a sauce for fish tacos.  It is so yummy!  There is a good chance we will eat it all before we get around to making fish tacos!

Squirty was patiently waiting for us to drop her a few bites.  Her face hair is growing out a little and this is when she starts to look like an Ewok.  She is too cute!

My Dad made dinner tonight which was a delicious chili verde done in the crockpot.  He chopped up a pork loin roast (we couldn’t find a shoulder at target the other day) and put it in with a sliced onion, some green enchilada sauce, salsa verde, a can of rotel tomatoes, and some salt & pepper.  It was goooooood.  We had some canned black beans and Rice-A-Roni whole grain spanish rice with it.  You can’t see my rice and beans because they are smothered and covered!  That’s a big ol’ dollop of sour cream on top.  In hindsight, I think the jalapeno yogurt would have also been delicious on this.

I also had the better portion of a low carb tortilla, which I’d never tried before.  They are definitely not as good as the real thing, but they’re edible.

Today I received the large package of Adagio Rooibos Vanilla Chai tea that I had ordered.  It came with a sample of their Christmas Tea.

I forgot to mention yesterday that our household finally received an Elf on the Shelf, courtesy of my mom.  (Thanks mom!) I had it for several days before I finally remembered to show him the book and the movie.  Last night he made his appearance sitting on the Christmas tree.  Then this morning he was on the high shelf in Nick’s room.  Nick named him “Birdie.”  Birdie will have a short season this year!

If anyone read my post from yesterday and was laying awake all night wondering what we decided to do with the beef tenderloin…..we froze it!  So, I’ll pull it back out on Sunday I guess.

Ok, well I’m going to hit the hay.  I’ve been up very late the past couple of nights and I want to see if getting a little more zzzzzzzz will help my fasting sugars.
