Fasting Blood Sugar = 120…..not as low as I would like, but at least it’s better than yesterday and below the 126 mark (diabetes cut off!)

I had some diced up bell pepper that I needed to use up, so they went into the eggs + beaters with some laughing cow cheese melted in. Nature’s Own 100% Whole Wheat toast was on the side.

The kids went to daycare this morning and my Dad went out to do some Christmas shopping while I got some work done.  For lunch I had a ham sandwich on whole wheat with cheese, lettuce, mayo, and spicy mustard.  I threw together a little salad as an excuse to eat my leftover salad dressing that I brought home from Chipotle the other day.  Seriously….that stuff is like liquid gold.  so delicious!!  Does anyone have a copycat recipe?  I’ll pay!

My Dad and I left at about 3:30 to pick up the kids and take them to a park near their daycare.

After we left the park we swung back home to pick up Ross and then the whole troop headed out to grab a bite and to stop by Costco.  We ate at Rumbi Island Grill, which is right across the street from Costco.  I forgot to take a picture of my plate, but I had the Voodoo Chicken Salad which was very good, although a little overdressed.

Our main mission at Costco was to check out their prime rib selection.  Their standing rib roasts were all choice grade, so we decided to get a prime grade tenderloin instead. When I was putting it into the fridge I noticed that the “sell-by” date is 12/20 (tomorrow!!)  I’m not going to cook it until Christmas day, so that’s 5 days later. I was going to stick it in the freezer for a few days, but Ross doesn’t think I should.  He thinks it will compromise the quality.  On the USDA website it says you should eat or freeze beef within 3-5 days of the sell-by date.  We are going to be on the outside edge of that at 5 days. I don’t know what to do!!!!!  My thinking is that I would rather take my chances with the freezer than potentially let an expensive piece of meat spoil.  Right??

On a random note….Cassadee Pope takes the Voice crown!  I was still rooting for Terry McDermott, but Cassadee did get really good over the last few episodes, and she was always popular, so I’m not surprised.

I just had a few slices of salami on crackers with laughing cow cheese for my night time snack.  Oh, and a decaf chai latte!
