I debated with myself about not doing a post today because I don’t have much content, but I might not be able to get one up tomorrow due to our two parties we are attending and so I decided to go ahead and post this little one.

Breakfast was scrambled eggs (big surprise) with a corn muffin and some avocado.  I decided to go ahead and make coffee today and thought I should start using up the Dunkin’ Donuts Pumpkin coffee that I have but I’m not wild about.  Usually when I have pumpkin flavored coffee I add half & half and either just splenda or maybe vanilla or pumpkin spice sugar free syrup, but when I was making this one I forgot that it was pumpkin coffee and started making it mocha style with special dark cocoa (also half & half and splenda).  It was so much better than how I usually make it.  The pumpkin coffee was actually good with the added chocolate flavor.  I guess this should be a no brainer since I like pumpkin chocolate chip muffins too!

After breakfast I wanted to take Nick in for a haircut at Great Clips but the wait was too long, so I dropped them off at daycare and stopped at Goodwill on the way home to browse for clothes for the ugly sweater party we are attending tomorrow night. I found an ugly Christmas shirt, which will have to be close enough.  I’ll try to remember to take a picture tomorrow. They obviously didn’t have anything in the extra tall size that Ross needs, so I’m going to have to get somewhat creative with his outfit.  In the midst of all this excitement I missed my blood sugar testing window.

I headed back home to get some work done and then searched around for some lunch.  There was one piece of fried chicken left from the chicken we picked up on Sunday, so I had that along with some canned soup.  Not gourmet by any means, but I didn’t have the time or desire to venture out for something else.

Ross was in North Carolina for work this week and flew home today.  He texted me before getting on his plane to let me know to pick him up at 4 and that he hadn’t eaten so he was going to be starving.  I swear I was planning to make shrimp scampi for dinner, but I thought he might be too hungry to wait for us to pick up the kids on the way home from the and then go home and cook.  So, I picked up the munchkins and took them to the airport with me and on the way home we stopped at PF Chang’s for their happy hour.  Rio only had about a 1 hour nap today and didn’t sleep in the car much so she was totally fussy, and dinner was chaotic.  I didn’t take any pictures, but we had the chicken lettuce wraps, ribs, crab rangoons, crispy green beans, pork and shrimp dumplings, and dynamite shrimp.  It was an appetizer buffet! Everything was good.

When we got home I got busy making cookies for our cookie exchange party tomorrow morning.  I made three batches of these York Peppermint Patty Fudge Cookies. Man, these are good.  This was my first time making them.  I’m just going to come out and say that I ate two…..and I may have licked the batter off of one beater.  :/  In an attempt to make up for the cookies I did about half of one of my Favorite workout videos, The Firm Total Sculpt plus Abs.  I had to cut it off at about 30 minutes because I wanted to do this post and I still need to take a shower and clean the kitchen up a bit before bed.  I’m going to try to get into bed by midnight tonight!
