Eat More Kale

You would think that since I went to bed about 2 hours earlier than normal on Sunday night I would have woken up with the sunrise Monday morning…..but no, that didn’t happen.  We all slept a little late and got a slow start to the day.

Monday Stats:

Fasting Blood Sugar = 112

Weight 185.5

For breakfast I toasted a piece of french toast from the freezer and topped it with a very thin layer of Biscoff Spread.  Seriously, this stuff is better than syrup!  I estimate that I had about 3g (carbs) worth of it.  Not bad!  The eggs + beaters were scrambled with some american cheese.

On my way home from dropping the kids off at daycare I stopped by Sprouts to grab a few groceries and some vitamins.  I picked up some Omega 3,6,9 flax/fish oil capsules to hopefully help with my dry dry skin.  I love Sprouts!  I would shop there more if it was closer to my house.  I also picked up some raw cashews that I’ve been wanting to use for a vegan broccoli “cheese” soup.  I’ll have to figure out a good time to try it out.

Lunch was the tilapia and whole grain blend from a couple of nights ago.  It was yummy again! I also had a piece of babybel cheese.

1 Hour After Meal Blood Sugar = 105

I took Squirty outside to try and get a good picture of her face for our Christmas card.  I cropped out most of the ugly background.  It was heck trying to get her attention away from the lizards long enough to get a shot.   My furry girlie is so cute! We adopted Squirty in the summer of 2008 and we were so lucky to find her!  There were a few dogs in the room with her and as soon as I sat down she climbed into my lap!  <3

I’ve been wanting to try this Spicy Peanut Kale Salad for a while, and I had almost all of the ingredients on hand, so I went ahead and whipped it up for dinner.  I also tossed in the beet greens from the beet we picked out of our garden a few days ago.  That’s why it turned out to be a little on the purple side.  I left out the cayenne pepper in case Rio wanted to eat any of it, and I didn’t have any pickled ginger.  I think I would have left it out anyway. I’m not a big fan of pickled ginger, and this salad had plenty of ginger in it already.  All and all, it was pretty tasty.

The healthy properties of the kale salad may have balanced out the rest of the meal…..hot dogs from Omaha Steaks, and some broccoli/cheese instant noodles.  Rio and I shared 1.5 dogs and the pile of noodles.

The most unfortunate event of the night was Rio learning to climb up on the couch by herself.  No good can come of this……

As I feared, there was no calm sitting taking place. Nick promptly started showing her how to jump on the couch.  I had to spend the rest of the evening trying to tame these two wild beasts!

After Rio went to bed Nick laid in my bed and read some nook books and watched some movies while I put together our Christmas cards online and ordered a few Christmas gifts (and had a decaf chai latte!)  While doing so, I was watching some Grey’s Anatomy episodes from a few weeks ago.  I am so ridiculous…..that show always makes me cry.
