The Biscoff Redemption

Sunday morning I decided to make Nick a special breakfast with whole wheat smiley face pancakes.  I put chocolate chips in a few and banana slices in a few, and then made a few plain ones.  I used a different whole wheat pancake base recipe than usual, which I didn’t like as much as my normal one.  They were good though.  I had a banana one.

What you don’t see in this picture is the Biscoff Spread that I added on after a few bites.  I hadn’t eaten it since the run of high numbers from a couple of days ago, so I thought….what the heck, let’s give it another try.

In lieu of coffee I decided to have Choffy this morning.  I have a couple of bags that I haven’t used in a while.  Choffy is made from 100% roasted cocoa beans, and is brewed like coffee.  It has tons of antioxidants and is supposed to give you energy from theobromine (naturally in cocoa), rather than from caffeine.   It’s not sweet on its own, so I like to add half & half and splenda, just like I would for coffee.

1.5 Hour After Meal Blood Sugar = 100  Yay!  The Biscoff Spread is not my bitter enemy!  This is great news, because the stuff is delicious!!  :)

After breakfast we spent some time outside.  Rio keeps wanting to pull off a tangerine, but they’re not ready yet.  We only have about 5, so I have to keep her away until they are ripe.  We don’t have any to spare!

Squirty is totally obsessed with this basil plant.  It must harbor a colony of lizards or something.  I don’t think she is going after the bees…..

Rio went down for her nap, so Nick and I took showers and had lunch.  I had some of the leftover Korean Beef Stir-Fry and spaghetti squash.

I didn’t test my sugar after lunch because the kids and I were at a birthday party over at a friend’s house.  They had a great time playing with the other kids, and luckily Nick didn’t want any cake.  That meant I didn’t have to even go by it!  Rio loved the chocolate dipped strawberries.  The first one I gave her had the green stem on it and she ate it so fast I wasn’t able to take it off!  After that I learned my lesson and started biting the green parts off before giving them to her.  :)

We stopped by Target on the way home to grab a few groceries and some Christmas tree decorations.  I’m replacing most of my ornaments this year because they are the thin glass kind that break easily and are sharp.  I’m afraid Rio will pull them down and hurt herself.  When Nick was her age we just didn’t put up the tree, but we need to put it up this year for Nick’s sake.

At Target we grabbed a fried chicken.  I showed Nick how to eat the meat from the drumsticks instead of taking the meat off for him, and he loved it!  I tossed up a little side salad with lettuce, cherry tomatoes, celery, and a drizzle of ranch dressing.  I decided to sacrifice the extra dirty dish and shook the salad up in a tupperware container.  Salads are so much better when they are shaken!  We had some steamed (in the microwave) edamame as well.

Nick and I had some peanuts and cheese for our night time snack.  I also had a decaf chai latte with half & half and splenda.  It’s so nice to have hot tea now that the weather is somewhat cool!  :)

I let Nick sleep in the “big bed” with me last night.  My plan was to lay with him until he fell asleep and then do a little reading in my current book club book (The Dovekeepers by Alice Hoffman), but I got so tired waiting for him to fall asleep that I just joined him.  It was an early night for me!
