Yesterday, Friday the 7th of December marked the 1 month anniversary of my little blog!  I can’t believe it!  Time goes by way too fast these days.

I had to have some lab work done in the morning which required me to be fasting.  I had asked by doctor to do some routine type checkup tests that I’ve never had done before, and also she wanted to check my A1C.  I made some eggs and toast for the kids, but couldn’t eat them.  :(

When I got home our landscapers were doing the seasonal maintenance on our yard and one of them told me that this beet was ready to pick!  Yay! Our first beet from the garden!  Look at how pretty those beet greens are.  The actual beet was on the small side, but that’s ok.

It was almost 11 by this time, but I couldn’t bring myself to dive right into lunch, so I had some scrambled eggs with a green bell pepper and one wedge of light laughing cow cheese.

I also made some toast with Ezekiel cinnamon raisin bread.  This bread is frozen, which makes it nice and easy to keep on hand.

I bought this Biscoff Spread a few days ago at World Market, because I’ve seen it several times on one of my favorite blogs, Kath Eats Real Food. It’s not a low carb food or anything (8g per TB) but I figured I would only have it in small amounts.

I put a very thin layer of this on my Ezekiel toast.  The bread has 18g on it’s own, and I’m sure I used less than a TB of the Biscoff Spread, so I believe this meal had no more than 26g of carbs.

1 Hour After Meal Blood Sugar = 153!!!!  :(   I was not expecting this at all!!  I thought it was a bogus reading, so I tested twice and got 145 the second time.  Not good.  Did the Biscoff Spread do me wrong????  This could be the start of a country song……

The afternoon was spent working and then I had a snack of some deli sliced turkey rolled around a piece of string cheese, and an apple.  I had this while walking out the door to run a few errands before picking up the kids.

I had planned to make hamburger patties for dinner, but I wasn’t sure what we were going to have with it.  I scavenged around and came up with the leftover spinach salad (of course!), and a few sweet potatoes. I decided to make sweet potato oven fries in hopes that the kids would like them.  I don’t get how both of them don’t like sweet potatoes.  What’s not to like?  It didn’t work, they each ate a couple, but that was it.

1 Hour After Meal Blood Sugar = 150!!   What is going on?!?!?!?  I’ll admit I popped a couple of sweet potato fries in my mouth while making our plates, but I don’t think I had THAT many.

Then she decided to play roller coaster in my suitcase.  I was finally cleaning it out from our trip last weekend!  :/

Ross’ mom came over for a little bit and we left her to put Rio to bed while Nick, Ross and I headed over to Lowe’s for some light bulbs.  We stopped at World Market on the way home to get new knobs for our new great room cabinets.  One of the glass knobs broke off in Ross’ hand while pulling open a drawer, so we decided to go get something more durable.  We decided on these little animals.  Aren’t they cute? We have 3 owls, 2 birds, and 2 elephants.

Back home I got busy putting our new family photos in frames and lost track of time.  Nick ended up going to bed pretty late, but that little stinker still had a heck of a time falling asleep!

After finally putting Nick to bed and doing a few other tasks around the house it was too late to do a blog post, and I decided to take a shower and go to bed instead!

Today (Saturday) we had the usual machaca burritos.  The pile of meat on the side is Rio’s half that I took out to cool off.  She gets her tortilla and meat separately.  The kid can chow down, but I don’t hand over whole burritos to her yet!  Soon enough!

As usual, I only ate part of the tortilla.

1 Hour After Meal Blood Sugar = 155!  Ok, now I was starting to get worried.  Why have my last few meal numbers been high?  I eat machaca burritos almost every Saturday and my numbers are always decent.  I don’t think I ate significantly more of the tortilla today.  :(   We were in the car on the way to the children’s museum when I tested my sugar, so I started looking around on the web with my phone for answers.  In order to spare any male readers the gory details I’ll just say that I believe it may be related to hormones (the kind that fluctuate monthly for ladies…) The only way to tell is to keep tracking I guess.

We bought annual memberships to the children’s museum, so you’ll be seeing us there a lot.  Nick likes this air tube/scarf throwing machine.

We played for about 90 minutes and we were really pushing Rio on her nap time, so we headed straight home after the museum. The spinach salad made it’s final appearance for lunch.

We also had turkey sandwiches.  I was trying to be extra careful after all the crazy high numbers, so I made mine a half.  Carrots and ranch were the side dish.  Nick, Ross and I ate on the patio while Rio napped.

1 Hour After Meal Blood Sugar = 121.  Yay!  (goal 140)  Finally a reasonable number!

While Nick played with some moon dough I decided to practice some more nail stamping. I still have the pink gel polish from the day after T-day, but it’s obviously starting to look grown out.  I thought I would try stamping over the base of my nails to mask it. I ended up choosing a whole nail design with little flower/sunbursts.  I did not accomplish my goal of masking the grown out area, but I was happy with how the flowers turned out for the most part.

Ross’ parents came over for dinner which was Sicilian Fish (tilapia) from Saving Dinner the Low Carb Way. It had a “sauce” of cherry tomatoes, mushrooms, onions and garlic. We served it with a whole grain blend (brown rice, wild rice, bulgar, red quinoa, and wheat) made by Archer Farms.  I had cooked the blend with some diced carrots, celery, and onions.  Steamed green beans were the topper!

Ross’ parents brought over a strawberry cream pie, but I only had a bite because I was still thinking about that string of high readings. I hope that streak doesn’t come back soon!

Nick was hanging out on my bed while I started typing up this post.  He could barely keep his eyes open but decided that he needed to eat a pear.  He was chowing down on that thing…..grunting and everything. He only stopped for a second to say “good pear.” I had to get a picture.  A video would have been better! When he finished this I put him to bed.

Today was a fun day, and tomorrow should be as well.  We have a birthday party to attend tomorrow afternoon for one of our playgroup friends.  I hope everyone is having a great weekend!   :)
