Drum roll please……..

The long awaited great room shelving project is finished!  Hooray!

The original plan was to hang our two Rick Sharp canvas prints above the shelves, but now I’m thinking that they may be hard to see way up there, especially with the chandelier blocking them. We might put them on the wall where the picture frames are now.

The paint is still drying on the shelving, so I can’t start loading them up yet…..but soon!

For breakfast we had the last leftover sausage from last Sunday diced up with a tomato and scrambled eggs + beaters.

The roasted tomatoes from last night were converted into soup today. I made this soup in the Vitamix.  The tomatoes, some salt, and chicken broth were blended together for about 7 minutes until it was steaming (the Vitamix rocks!), and then some cream and thyme were added in and blended for just a few more seconds.  We had this for lunch.

We also had some more of the cranberry spinach salad with the leftover buffalo chicken diced up on top.  I did use a little of the sugary dressing, but it was a really small amount.

I was planning to make a crockpot chicken dish from Saving Dinner the Low Carb Way, but I forgot to put it in, so I ended up making Paula Deen’s chicken paprika.  This is one of my favorite recipes because I almost always have the ingredients on hand, which are basically onions, garlic, paprika, salt & pepper, and sour cream.  I usually use chicken thighs for this, although I have used other cuts as well.

I found that I was accumulating an overstock of potatoes, so I made mashed potatoes to go with the chicken, and frozen broccoli. I love the Steamfresh frozen veggies.  They come out so much better for me than the kind that you have to heat up in water.

I was cleaning up in the kitchen and realized that everyone was missing.  I found them all hanging out in Nick’s room. Rio thinks being on the big boy bed is so cool!

I hung up the Christmas stockings today, including my Dad’s because he will be here with us.  On the phone tonight Nick told him “Grandpa we have something on the wall for you to put on your foot!”  LOL….I guess the kid doesn’t remember the stockings from last year.
