This morning Ross had to go to have a endoscopic examination of his throat and stomach as a follow up to a prior exam.  We think he has an allergy.  Anyway, on the way to daycare we were telling Nick that the doctor was going to stick a flashlight down daddy’s throat and look in his tummy.  Nick said “then you will be like a shiny monster because the light will shine out of your belly!”  :)

The kids and I had some breakfast before we headed out.  We had to scoot out earlier than usual, so it was a quick one.  We had some over-hard eggs which I cooked in a non-stick pan with a little bit of coconut oil, and some French toast from the freezer.

I had a hard time taking a picture were the eggs didn’t look all weird and shiny (shiny monster eggs?), probably because of the reflective American cheese!  I know it’s funky fake food, but I have been addicted to Kraft American cheese for many many years! I forgot to bring my testing kit to the doctor’s office, but I’ve eaten this meal before with success, so I think my numbers were probably fine.

I took my laptop to the doctor’s office and was able to get in about 45 minutes of work, but then they called me back to sit by Ross while he was waking up before being discharged.  Ross was starving when we left because he couldn’t have breakfast, so we had lunch at JR’s Burger Grill which was right down the street.  It seems that it’s owned by Johnny Rocket Burgers, but it’s different.  They had one meal type salad option, but I didn’t see it until I had already ordered, so I just ended up with a burger combo with half & half fries and onion rings.  I had lettuce, tomato, jalapenos, and grilled onions on the burger.  It was good, but not as good as a Five Guys burger!  I avoided the bun and ate a good portion of the fries.

1 Hour After Meal Blood Sugar = 152  :(    Doh!  Too many fries.  (goal = 140)  I don’t usually have a hard time only eating a few fries, but these were really good.  They were extra brown and crispy on the edges.

Our afternoon snack was protein shakes made with vanilla whey protein, unsweetened almond milk, frozen bananas, frozen blueberries, and a couple of tablespoons of PB2.

It was beautiful outside today, if you didn’t stand in the sun for too long.  our garden is really growing fast!  I wonder how I will know when the beets are ready to be picked since they are underground?

The munchkins came home from daycare and ran straight for the juice cups, as always.  I don’t know why, but they are always so thirsty when they get home.  I guess running around with their friends is hard work!

While they chugged down the juice and Rio snacked on grapes and apple slices, I made this Korean Beef Stir Fry with Spinach from Saving Dinner the Low Carb Way.  The beef I used didn’t end up being that tender, but the sauce was good. It was served over a big pile of spaghetti squash from the Nature’s Garden Delivered Box that I received this morning, and a little bit of leftover royal blend rice.

I decided to re-try the cocktail that I had originally planned to serve on T-day.  It’s a mix of apple cider, pineapple juice, and rum.
For T-Day I made my own cider using the original recipe.  My Dad and I tasted it and thought the anise flavor was way too strong, so we pitched the cider and I didn’t serve the drink. I made tonight’s drink using bottled cider and it was much better.  I only had a small one because the cider and pineapple juice are on the high carb side. I also had a piece of Babybel cheese and some peanuts for protein.

Speaking of alcohol, this is the white elephant gift that I received at my book club’s potluck on Monday night.  I got lucky and picked the gift brought by a member who didn’t know about the $10 limit!  :)    It’s a bottle of whipped cream flavored vodka and some little mixers that are different flavors.  A few of the ladies gave me suggestions for the vodka such as mixing it with diet orange cream flavored seltzer water, or diet orange soda.  I’ll have to try it soon!

I roasted some tomatoes tonight, for a soup that I plan to make tomorrow, probably for lunch. The recipe had me roasting them at 200 degrees for 4 hours!  This is what they looked like after about one hour and fifteen minutes.  (They are cored.)

I caught up on this week’s episodes of The Voice today,  I can’t believe Amanda Brown got eliminated.  Then again, I think everyone left is really good too.  I think my favorite is still Terry McDermott.  He totally rocked it with “I Want to Know What Love is.”
