The Best Barbecue

The Best Barbecue

“People are so worried about what they eat between Christmas and the New Year, but they really should be worried about what they eat between the New Year and Christmas.”    – Author Unknown

Today was a busy day!

We sausage scrambled in some eggs + beaters for breakfast, with toast on the side.

We had to eat quickly and get out the door in order to take my dad to the airport.  (We miss you Dad!) After dropping him off we met up with some friends at the Phoenix Children’s Museum.  Nick had a great time playing with his friend Zoe, who happens to be one of the cutest ans sweetest little girls around.  :)

Rio was getting really tired, so we headed home and had some lunch. I had some leftover burgundy mushrooms and split pea soup that my Dad made while he was here.

Split Pea Soup and Burgundy Mushrooms

1 Hour After Meal Blood Sugar = 156!! (goal 140) I know peas have carbs, but I thought since they were a “whole food” that they wouldn’t spike my sugar.  I guess the lesson here is that I should only eat split pea soup in smaller amounts as a side dish rather than as the main part of my meal.  Sheesh!

Rio took a short nap in the car on the way home from the museum, so she didn’t want to go back down right away.  We played outside for a while to wear her back out.

Nick wanted to see if his hand still fit in the stepping stone that he made several months ago.

Of course Sissy had to give it a try too!

During Rio’s nap we had some quiet time.  Nick watched a move and I read a good chunk of my current book club selection, Gone Girl, by Gillian Flynn.  I am so hooked on it right now.  I’ve been staying up late reading most every night.  I’m about 3/4 of the way done.

We picked up Ross’ mom and took her to dinner at Bobby Q for her birthday. I love this place!!  They have the BEST barbecue. I don’t think I’ve ever had something there that I wasn’t crazy about.  After the high lunch numbers I wanted to not go crazy, so I ordered pulled pork with grilled vegetables and mac & cheese.  I gave the mac & cheese to Rio.  She loved it!

In addition to the meal, they give you these tasty little corn muffins discs. They are sweet and delicious! I tried to pawn most of this one off on Rio and Nick.

We also had these rolls which were filled with shredded brisket.  Rio and I shared one.

After dinner they give you these little hot fresh cinnamon sugar donuts, which I think are better than the desserts on the menu.  I had only a couple of small bites of one and then gave the rest to Rio.  She threw it on the ground.  :(

We had to stop by Fry’s Electronics after dinner and then we made the 30 minute trek home.  I forgot my sugar kit, so we’ll never know how much damage that honey cornbread did!

We capped off the night by starting to watch Season 1 of Game of Thrones.  We have the first two seasons downloaded on Direct TV. I haven’t read the books yet.  The show is good so far!

Take care friends!
