Counting Down to T-day

I woke up feeling like I had about a million things to do on this Thanksgiving eve, and looking forward to seeing our family!

Ok, I’m just going to say up front that the healthy(ish) eating and sugar testing went a little off the rails today!  I was distracted with running errands and picking up my dad at the airport and forgot to test my sugar twice!  And, I forgot to take a picture of my lunch.  :(   I only remembered to take a picture of dinner when we were about 3/4 of the way done.

I’m not going to be hard on myself though.  When Thanksgiving is over I’ll get back to a more normal schedule and be able to plan meals and I’ll be home with my oven timer to remind me to test my sugar!

This morning I remembered that we still had some leftover french toast in the freezer, so we had over-hard eggs with cinnamon raisin french toast.  This french toast freezes and re-heats so well!!

I didn’t remember to test my sugar, but I think it was in a decent range.  I’ve eaten this breakfast before with ok results.

After picking up my Dad at the airport and stopping by Sprouts to get my reserved turkey, we grabbed some Chipotle to take home for Ross (and us.) I had the salad with barbacoa, black beans, pico de gallo, cheese, and sour cream.  Now this is a delicious lunch!  It’s proven to be blood sugar friendly in the past, although it’s probably not the healthiest meal in the world (hello cheese and sour cream!) The best best best part of this salad is the dressing.  I don’t know what they put in that stuff, but it is so freaking good.  I know it has a ton of salt, but you only need a little bit because it is so flavorful.  I’ve looked for a recipe online without success.

After lunch we picked the kids up from daycare and Nick wasted no time in starting a sword fight with Grandpa Phillip.

Rio decided that playing with the computer was a safer activity.

My Dad took the kids out to play while I started preparing various items for Thanksgiving tomorrow.

When it was time to get ready for dinner, Nick had to change because he had gotten all dirty outside.  He decided to dress himself.   I let the color/pattern combo slide, but I did help him turn around his shirt.  :)

We went out for sushi for dinner and got to sit out on the patio at our favorite place, Akai Hana.

This is my favorite roll…..the Las Vegas.  It comes with this delicious green sauce. I don’t know what is in it but I love it!  Tomatillos maybe?

Before we left for dinner and after we got home I was preparing for tomorrow by making a cajun cake, some cranberry sauce, turkey brine, and mulled cider for pineapple cider cocktails.  I was taste testing these things off and on as I went, so I knew that my sugar numbers were going to be off.  Plus, sushi isn’t the most blood sugar friendly meal due to the white rice.  I decided to test my sugar at the 2 hour mark anyway….

2 Hour After Meal (and continued bites :) )Blood Sugar = 140   Not great, but not terrible considering the circumstances.

It’s about 11:30 right now and we are expecting one of Ross’ brothers (Rex) and his niece (Nicole) any minute.  Tomorrow will bring Ross’ other brother Robert and his wife Angeles, as well as my mom and her husband Tom.  It’s going to be a packed house!  I love it!

I’m feeling pretty good about my prep work.  I have the cheese balls and cranberry sauce made, as well as one cake, pie crust, and beverages.  The turkey is brining in the refrigerator.  Hopefully tomorrow will go smoothly!
