Nick woke up super early this morning and was crazy energetic right off the bat.  I tried to get him to lay back down with me, but he wouldn’t.  :(

Breakfast would have been quite boring this morning if I hadn’t picked up some new hot cereal yesterday at TJ Maxx Home Goods.  That place has the most random stuff.  It’s called Hot & Fit Cereal – Mayan Blend.

It’s a mix of several grains, seeds, cashews, and cocoa. The directions say to make it with water, but I used unsweetened almond milk.  The directions also said to add any sweetener of choice, and I of course used splenda.  It was very good.  I would definitely buy it again.

2 Hour After Meal Blood Sugar = 121

After taking the kids to daycare I stopped by the grocery store to get the remainder of my T-day groceries.  I’m certain there will be at least one more emergency trip before the big meal though.  After I got home and got unpacked Ross and I had to go take some things to Goodwill.  We’re trying to clear out some space for our incoming guests.

On the way to goodwill we stopped at Ramiro’s for lunch.  I had the taco salad, just like the last time we went there.  I tried to figure out another lower carb option, but mexican food is tough!

In the afternoon I had to make stops at Ross (the store….not the guy!), World Market,Target, and Sally Beauty, and then I went to Panda Express to grab dinner.  I did a little research on my phone in the parking lot regarding lower carb options, and decided to go with the broccoli & beef, and the cashew chicken with vegetables on the side. What did we do without smart phones?

Since I didn’t have to cook dinner, I used the time to get a jump on Thanksgiving and made some chutney-cheese balls.  One dish down!  They are made of cream cheese, shredded colby jack cheese, mango chutney, green onions and seasoning, and then one was rolled in dried apricots and pecans and the other was rolled in pistachios and parsley.   This was my first time making these, so I hope they are good!

I had some cheese and crackers for my night time snack, and am trying to get my nails painted while typing this.  (Not a good idea!)

I’m looking forward to seeing my Dad tomorrow, and then the rest of the family on Thursday.  Tomorrow will be another busy day!
