Today was one of those morning where I just didn’t want to get up.  Luckily I woke up to Nick poking and me and telling me he wanted to come up on “the big bed” and snuggle with me.  Not a bad wake up call!

In a continuing effort to plow through all of the random leftovers in the fridge, I scrambled up some eggs + egg beaters with a little bit of chicken breast, black beans, and a smidge of shredded mozzarella. I topped this pile with 1/2 of an avocado.  Rio and I shared this, but she didn’t eat any of the avocado.  I just can’t figure out how a child of mine can not like avocado.  It’s crazy I say!!

I reverted back to the 3-bag Tazo chai latte today, mixed of course with a splash of half & half and splenda.  I know I need to break my splenda addiction at some point!

How cute is this? Nick and Rio were holding hands in the car on the way to daycare.  I promise I took this after we stopped!  After he let go she kept holding out her little hand to reach for him.  <3

The remainder of the morning flew by and I didn’t have time for a morning snack (again.)  The chicken breast made it’s final appearance at lunch.  I had it on a salad with some peas, corn, yellow bell pepper, romaine, spinach, and Ken’s light honey mustard.

1 Hour After Meal Blood Sugar = 130  (My 1 hour goal is 140, so I was ok here)

I tested my lunch numbers at one hour because I needed to get some command strips and a few other things from Target and I decided to ride my bike!  It was scary riding my bike on the road in Santa Barbara because the roads were narrow and you would be right in the thick of the cars all the time.  It’s scary here for other reasons.  The roads are wider and not as crowded here, but the speed limits are higher and people drive so fast. Also, you don’t see that many bikes around, so I think drivers are not as aware of bikers.  In Santa Barbara there were bikes and pedestrians everywhere.

I strapped on my helmet and took the long route to Target, which lets me only cross the bigger streets rather than ride down them.  It winds me through another community, which is a lot less scary than the major roads.  The weather was cool and it was a nice day for a ride.  Everything went well, until on the way back I got caught in a pack (fleet?) of school buses.  Every time one would pull over to the right to let kids off I didn’t know what to do.  I didn’t think I should go around it on the left side, and I couldn’t really fit through on the right side (and there were kids on that side so I couldn’t do that anyway), so I just kept stopping behind the bus and waiting for it to go. I felt pretty silly sitting there on a bike stopped behind the bus, but at least no kids made fun of me (to my face anyway!)

I had no good plan for dinner so the kids and I hit Senor Taco on the way home.  I ordered the carnitas plate with rice and beans for Rio and I.  Nick had a quesadilla and a banana.  Rio chowed down big time!  She even ate some of Nick’s quesadilla and a whole banana too.  I ate a little of the tortilla and the rice and beans but I tried to not go crazy with them.

Nick brought home a completed workbook from daycare today.  This was his favorite page!  He loves potato head!

For my nighttime snack I had some cheese and crackers, and some of this dessert tea.  It’s really yummy!

Ross will be home tomorrow so I need to get a good meal plan going to get us through next Wednesday.  I guess I should bust out Saving Dinner the Low Carb Way!  I can’t believe that Thanksgiving is only a week away.  I finally sat down for a few minutes and started sketching out a menu last night. I want to do a few things differently this year.  I still have a lot of planning and work to do.  I did reserve a turkey at Sprouts, so at least I know that is covered.
