Today was one of those days……I feels like I was a little behind the curve all day long.

I found some leftover roasted bell peppers and onions from last week’s roasted chicken dinner, so I combined them with a little bit of leftover ground beef and scrambled it up with some eggs.  I also had veggie cereal left from yesterday, so I had a small bowl of that on the side.  Writing out all of my meals makes me realize that I am the leftover queen!

Rio would not stay out of Squirty’s food and water bowls this morning.  She was driving me cuckoo! At least she helped me pick it back up (one of the times.)

After I dropped the kids off at daycare I had to run down to Verizon and get a new cell phone.  Mine has been having trouble charging, and has been on it’s last leg for a while.  I’ve been hesitant to get a new one though, because I hate going through the learning curve.  I stuck with the Droid platform and got the Samsung Galaxy SIII.

The whole Verizon trip took way longer than I expected and I didn’t have time for a morning snack, so I dove right into lunch. I had this leftover roasted chicken breast on top of some of last night’s vegetable fried rice and beans.  I threw a couple of extra pineapple slices on the side.

I was able to get some work done in the afternoon, and then I had to rush to throw together an antipasto salad for Nick’s last soccer game and pizza party with our playgroup.  I wanted to take a picture of the salad, but I was running out the door late and didn’t have a chance.  I used romaine lettuce, spinach, salami, turkey pepperoni, black olives, cherry tomatoes, and a lot of shredded mozzarella cheese.

Nick had fun playing soccer today.  I think this was the first time I didn’t have to chase him from the swing set and make him get back with the group. Figures, since it was the last game he would finally start to get the hang of it.  :)

Then Nick came over for a water break and took it back!  Poor sissy…..

I knew we were having pizza tonight, so my plan was to eat a big pile of meaty cheesy antipasto salad, and then have one slice of pizza.   Unfortunately the plan did not account for the banana pudding and the pumpkin cookies!  I could not resist sampling them both!!!!

Rio was a little fussy and sat on my lap while eating, so I didn’t manage to get a picture of the food, so instead I will post a picture of the evidence:

Ay Caramba!  Actually, it wasn’t as bad as I thought it might be.  I’m not gong to beat myself up over it because I’ve been pretty happy with my sugar levels for the past week. Nobody’s perfect, right?!?!  :)

However, I read an article today that reinforced my desire to have my blood sugar under control.  There are studies out there which are saying that Alzheimer’s may really be Type 3 diabetes, and that is is caused by insulin resistance.   Here is one article explaining this.   After watching my Grandpa start down the pathway to Dementia before he died, this really freaks me out.  I’m no doctor, and I don’t know if this is true or not, but I do know that the older I get them more and more I believe that food is medicine and we are what we eat!

When I was laying down with Nick tonight I told him I was proud of him for being good at soccer today and he said “I’m proud of you for giving me kisses while we were there.”  LOL!  My boy cracks me up!
