We were out of eggs this morning, so I decided to make a recipe that I haven’t had in a while, raw veggie cereal.  Yep, that’s right…..it’s a cold cereal made from raw veggies (carrots, cauliflower and broccoli) but it also has apples and pecans.  I happened to have all of the ingredients on hand.  This recipe sounds totally weird, but is very tasty.  Even Ross likes it!

And here it is in the bowl, with a healthy shake of cinnamon, some shredded coconut, and some buckwheat groats.  I think the buckwheat groats add a nice crunch.  I usually go heavier on the shredded coconut, but I only had the sweetened kind on hand so I had to watch it.  I love coconut!  I have made this recipe many times and I’ve determined that the main factor in how good it comes out is how delicious your apples are.  If you have good firm sweet apples, this cereal is darn tasty!

I like to take some unsweetened almond milk and give it a pump of Torani sugar free french vanilla syrup to make a yummy sweet milk to go over this cereal.

I used the IngenuiTEA again today and tried out the Adagio Almond flavor.  It was pretty good.  It reminded me of those candy covered almonds that are often at weddings.  I didn’t like it as much as the Oriental Spice though.

After breakfast Nick and Rio raced back and forth across the house.  I think Rio had the advantage because she was running without pants…..less wind resistance.   :)

It was boring around here today after the kids went to daycare.  Ross and I are lucky that we both work from home so neither one of us is usually home alone all day.

For lunch I took some ground beef that I had left over from when I made Salisbury Steaks last week and make a taco salad out of it.  I put it on some romaine lettuce with black beans, yellow bell pepper, corn, pepper jack cheese, and a “dressing” of salsa and sour cream.   I paired this with some ice water.

While making lunch I also started preparing dinner.  I had some chicken tenders and wanted to make chicken strips out of them without using breading.  I knew that I wanted to serve them with fried rice, so I was out to keep the carb count low.  I found some recipes online that used parmesan cheese as a crust so I decided to go with it.

The tenders soaked in a mixture of ranch dressing, half & half, onion powder, garlic powder, and black pepper.

In the afternoon I decided to take a break from work and get in a little exercise.  I was going to pop in a workout video but then I decided it would be a good time to dust off the ol’ bike.  I’ve been telling Ross that I want a bike trailer to haul the kids around behind my bike.  He is totally skeptical that I could/would do this and keeps telling me to start riding my bike as proof that I would actually use the trailer.  The problem is that I don’t have a lot of time to bike ride while the kids are at daycare.  I will mainly want to use the trailer on the weekends when they are home.

So, I thought “here is my chance” and went to grab my bike.  There were some obstacles to overcome before actually getting to the riding part.  You may (or may not) see my turquoise colored bike all the way in the very back of the garage behind the piles of baby stuff…….yeah, it’s been a while since I’ve been on it!

Ross got me this bike for my birthday 4 or 5 years ago when we still lived in Santa Barbara.  We only went out riding together a few times before he wrote me off as hopeless.  To his credit, I did think I was going to die after riding to breakfast one morning, but in my defense it was uphill the whole way!  I don’t know exactly how much of an incline you need to properly define a “hill,” but I’m sure this qualified.  (Probably.)   He used to get so impatient waiting for me and would always say he didn’t know how I kept the bike upright because I went so slow!

I managed to get the bike out of the pile, but then it had flat tires!  Luckily Ross has the garage pretty organized and I was able to find the pump.

Hello long lost bike!

I was pretty wiped out from the garage digging and tire pumping, but I took a quick spin around the neighborhood anyway.  I will say I’m glad I didn’t have 100 pounds of kid and trailer attached to me for my maiden voyage.  I’m not sure we would have been able to get any forward motion!  I guess I need to practice a bit!

After the bike ride I decided that my afternoon snack would be the second half of the pumpkin spice latte that I got from Starbucks yesterday.  I forgot to write about it yesterday, but I bought it at the airport intending to take it home and have it as my snack later.  I don’t know what it is about me and the Starbucks pumpkin spice latte.  I am a huge pumpkin fan.  I love pumpkin pie, ice cream, muffins, cookies, etc.  So every year when this comes out and I see everyone getting all excited about it on facebook I convince myself that I need to have one, and then I get it and I don’t like it.  I had the same experience yesterday.  But to make matters worse, before I started drinking it I looked up the nutritional info.  I was thinking it would have maybe 20 carbs for the tall size.  WRONG.  It has a whopping 38 grams in that little cup!  I didn’t want to waste it though, so I poured half of it into a glass, added some unsweetened almond milk and heated it up.  I thought it tasted better that way.  Next year when I get the itch to order one of these puppies I can come back to this post and remember why not to!

After we got home from daycare Rio took a late nap while I made dinner.  The chicken tenders came out of the bath and I rolled them in parmesan cheese and Italian spice.  I won’t say it was a total bust because they tasted very good, but the crazy burnt-on puddles of melted cheese around each strip pretty much ruined my baking sheet!  Next time I will either use foil or possibly only put the cheese on the top.

I also made some fried brown rice with chickpeas, carrots, pineapples, green peas, garlic, ginger, and soy sauce.  The recipe came from one of my Better Homes and Gardens magazines.  It was very good but it made a big batch!  I’m going to be eating it for a while!!

I guess I’ll go dig around for a nighttime snack and then spend a few minutes cleaning up the kitchen.  Tomorrow will be a busy day.  I need to go get a new phone, and Nick has a soccer game/pizza party in the afternoon.
